The Newest Eco Food Trend: Blended Burgers

Though many environmentalists understand that red meat isn’t always green, it can be tough to forgo a juicy beef burger for its vegetarian alternative when dining out.

The all-or-nothing approach is common when it comes to red meat consumption, but restaurants are now taking strides toward a sustainable happy medium.

Introducing Blended Burgers

The newest trend in sustainable burgers is the blended burger — a beef patty blended with mushrooms. It still has real meat for those who just don’t want to give it up, but its carbon footprint is significantly smaller.

While you’ll find these burgers popping up on menus at sit-down restaurants everywhere, they’re just gaining steam in the fast-food world. Sonic, which has more than 3,500 restaurants across 45 U.S. states, was the first national fast-food chain to adopt this healthier burger alternative, which rolled out nationwide last month. Their version is called the Signature Slinger, and it’s made from three simple ingredients: 100 percent beef, savory mushrooms and seasonings.

It was a smart move. As the demand for sustainable food rises and more folks choose natural beef sources, quick-serve restaurants find themselves between a rock and a hard place. Fast food is known for being cheap, but sustainable beef isn’t. Because mushrooms are relatively low in cost, the blended burger could mean higher-quality, antibiotic-free, hormone-free beef without a spike in price.

All About That Taste

Blended burgers typically have significantly fewer grams of fat, carbs and calories compared with their all-beef counterparts. But now for the big question: What about the taste?

The James Beard Foundation has partnered with the Mushroom Council to host The Blended Burger Project, a contest and movement encouraging chefs to create their own mushroom-beef blended dishes. Competitors’ dishes are judged in terms of their creative use of mushrooms, flavor profile and overall presentation. With more than 200 enthusiastic participants in 2017, the contest is well on its way toward balancing nutrition, sustainability and flavor in America’s food system.

As previous award winner Stephanie Izard points out in an interview with the James Beard Foundation, “you shouldn’t have to sacrifice flavor in order to think sustainably.”

Mushrooms have a meat-like consistency and are incredibly juicy. So, when it comes to meat substitutes, they’re a no-brainer. They add a mild umami-flavored kick to burgers and give dishes unparalleled depth.

“Mushrooms have really come into their own as a solution to changing dietary patterns, earning their place on the plate with their nutrient quality, flavor impact and incredible functionality,” said Greg Descher, vice president of strategic initiatives and industry leadership at the Culinary Institute of America, in the company’s study on mushroom-beef blending.

A Sustainable Outlook

Who will offer a blended burger next? While McDonald’s recently announced some big steps to reduce carbon emissions — the equivalent of taking 32 million cars off the road for a year — the announcement did not include any menu changes.

Getting McDonald’s on the blended burger bandwagon would make a huge difference. With 37,000 locations around the world, there’s no denying the impact of the fast-food behemoth.

“Where McDonald’s goes, usually the rest of the restaurant industry eventually follows,” said Sara Senatore, a senior research analyst at a restaurant investment research firm, in an interview with The Washington Post.

Fortunately, McDonald’s has recognized the environmental impact of beef production and plans to address sustainable agriculture practices in its green initiatives. It remains to be seen just how the company will do that, and how other meat-serving establishments will address their undeniable environmental impact.

While a blended burger may not be a perfect solution, it’s a great option for meat eaters. Given the success of Sonic and other restaurants using this approach, we hope more eateries will join this sustainable movement.

Green Beer for St. Paddy’s Day! Not So Fast

As parade and bar-goers know, the color green saturates everything in sight on St. Paddy’s Day — including food and drink.

But what may seem like a harmless way to celebrate all things Irish (yes, we’re talking about you, green beer and green milkshakes) is in fact not all that bonny for the planet or your body, research shows.

Industrial artificial green food coloring — known variously as FD&C Green No. 3 and Fast Green FCF — is derived from petroleum, a limited resource, and contains coal tar. It’s also associated with an increased risk of certain cancers and hyperactivity in children, according to a study released by the Center for Science in the Public Interest.

The European Union requires a warning label on foods containing dye, including FD&C Green No. 3, but in the U.S. it remains one of nine synthetic dyes FDA-approved for food processing.

Still thirsty for a green beer?

Try coloring up your drink with a naturally derived food dye instead. India Tree dyes use red cabbage, turmeric and beets to create intense shades of blue, yellow and red. (Remember from grade school? Blue + yellow = green.) Chefmaster sells ready-made green derived from red cabbage and beta carotene.

If you’re game for the DIY route, check out these instructions for fruit- and veggie-based homemade dye from the Natural Resources Defense Council’s Simple Steps site. (It works — the city of Chicago, which dyes its river green every St. Patrick’s Day, uses vegetable dye to get the job done.)

3 Green Goals Worth Setting in 2018

The start of a new year is traditionally the time to reflect on the past and set goals to improve in the future. As you do so, consider setting some personal environmental goals to help you on your path to living a greener, healthier, more sustainable life. The three goals below are a great place to start.

Reduce Your Food Waste

According to the Natural Resources Defense Council, the average American household throws away $2,200 worth of food each year. Clearly, cutting back on food waste is something most of us could work on. Shopping smarter is the first step in reducing your food waste. Walking into the grocery store with no plan can be a big mistake. Without a plan, it’s easy to buy far more food than you’ll actually eat, or foods that you won’t eat all of, during a given week.

By planning effectively, you can buy exactly what you need without getting too much excess. Finding good recipes is a key component. Often, recipes will call for a small portion of something, such as half a bell pepper. As you plan your meals for a week, find recipes that use many of the same ingredients, so you won’t be left with extras. Don’t forget to visit the bulk bins, where you can get exactly the quantity you need of certain ingredients. And make sure you actually eat the leftovers, rather than watching them grow mold in the back of your refrigerator.

When you do have leftovers that don’t get eaten, a backyard composting heap can be an excellent way to reuse them. Composting can be done regardless of your yard size, and can even been done when you live in an apartment.

Decrease Time in the Car

Cutting back on time in a car can be a daunting task, especially if you’re one of the many people that has to commute to work each day. But there are a number of things you can do to reduce the mileage.

One, you could switch to public transit a few days each week if this is available in your area. Riding the train, subway, or bus may not always be convenient, but by doing it just a couple of days per week, you’ll make a significant impact over the course of a year.

Two, carpool with a coworker. I get it, carpooling can be a bit of a pain. You’re forced to work on someone else’s schedule and there’s no “swinging by the store” on your way home. But instead of carpooling every day, why not do it a few days each week? If you carpooled every Tuesday and Thursday, you’d reduce your driving and get to know your coworkers better.

Three, work from home more. While not every employer is open to the idea of remote workers just yet, why not try easing your boss into it. See if you can work from home just once a week or even one day every other week. As they see your productivity unchanged, they may open up to letting you do so more often.

Cut Back on Consumption

The last goal I’ll list here for you to consider setting this year is to consume less. Every new item you buy requires resources to manufacture and transport. In many cases, these items will be used a limited number of times before ending up shoved into a closet or, even worse, in the trash.

When considering a purchase, first think about how much you’ll actually use it. If the answer is rarely, consider borrowing it from a neighbor or friend. You may not need a power sander regularly, but your neighbor may be willing to let you use his. Participating in the sharing economy can be an effective way to reduce your consumption. There are also many services that rent out equipment and items for short periods of time.

If it’s something you will use often, first consider buying it used. There are so many great ways to shop for used items these days, you’re bound to find what you’re looking for in good condition somewhere. If you do need/want to buy new, always strive to buy quality items. This is especially important when it comes to clothes and shoes. You may have to pay a bit more, but in the long run, it’s absolutely worth it.

A federal panel helped cities cope with climate change. Trump killed it.

Today, the president signed two proclamations drastically cutting land from two federal monuments, Bears Ears and Grand Staircase-Escalante, by 80 percent and 45 percent, respectively.

When President Obama designated Bears Ears a national monument last year, it was a huge victory for five Utah tribes — the Navajo Nation, Ute Mountain Ute Tribe, Ute Indian Tribe, Hopi, and the Pueblo of Zuni — who came together in 2015 to push for the preservation of what they estimate are 100,000 cultural and ancestral sites, some dating back to 1300 AD, in the region.

“More than 150 years ago, the federal government removed our ancestors from Bears Ears at gunpoint and sent them on the Long Walk,” Navajo Nation Council Delegate Davis Filfred said in statement. “But we came back.”

The Antiquities Act of 1906 gives the president authority to establish national monuments, largely to thwart looting of archaeological sites. Trump is the first president to shrink a monument in decades.

The five tribes have said they will bring a legal case against the administration — the outcome could redefine the president’s powers to use the Antiquities Act. “We know how to fight and we will fight to defend Bears Ears,” Filfred said.

Kathleen Hartnett White, President Donald Trump’s nominee to lead the White House Council on Environmental Quality, stammered through her confirmation hearing on Wednesday.

When Senator Ben Cardin of Maryland, a Democrat, asked if she believes climate change is real, she wavered but settled on the right answer: “I am uncertain. No, I’m not. I jumped ahead. Climate change is of course real.”

That’s a surprise. Hartnett White, a former chair of the Texas Commission on Environmental Quality, has a long history of challenging climate science and promoting fossil fuels. Notably, she has said that carbon dioxide isn’t a pollutant.

But that’s not to say she’s made peace with established science. Senator Sheldon Whitehouse, a Democrat from Rhode Island, quizzed Hartnett White over how much excess heat in the atmosphere is absorbed by oceans. “I believe there are differences of opinions on that,” she said, “that there’s not one right answer.” For the record, the number is about 90 percent.

Then things got bizarre. Appearing frustrated with equivocating answers, Whitehouse pressed her on basic laws of nature, like whether heat makes water expand. “I do not have any kind of expertise or even much layman study of the ocean dynamics and the climate-change issues,” she said.

Trump Is Now Lying to His Own National Security Staff

In his NATO speech a week ago, Donald Trump declined to explicitly endorse Article 5, the provision that says an attack on one is an attack on all. I’m on record as suggesting that reaction to this was sort of overblown, but Susan Glasser provides some behind-the-scenes context to suggest it was quite a bit worse than I thought. It turns out that Trump’s entire national security team wanted him to offer a public endorsement:

National security adviser H.R. McMaster, Defense Secretary James Mattis and Secretary of State Rex Tillerson all supported Trump doing so and had worked in the weeks leading up to the trip to make sure it was included in the speech, according to five sources familiar with the episode. They thought it was, and a White House aide even told The New York Times the day before the line was definitely included.

….The frantic, last-minute maneuvering over the speech, I’m told, included “MM&T,” as some now refer to the trio of Mattis, McMaster and Tillerson, lobbying in the days leading up to it to get a copy of the president’s planned remarks and then pushing hard once they obtained the draft to get the Article 5 language in it, only to see it removed again. All of which further confirms a level of White House dysfunction that veterans of both parties I’ve talked with in recent months say is beyond anything they can recall.

This is…astonishing. MM&T had to lobby just to get a copy of Trump’s remarks? And then, after getting the wording in, it was removed behind their backs? WTF?

“They had the right speech and it was cleared through McMaster,” said a source briefed by National Security Council officials in the immediate aftermath of the NATO meeting….“They didn’t know it had been removed,” said a third source of the Trump national security officials on hand for the ceremony. “It was only upon delivery.”

….The episode suggests that what has been portrayed—correctly—as a major rift within the 70-year-old Atlantic alliance is also a significant moment of rupture inside the Trump administration, with the president withholding crucial information from his top national security officials—and then embarrassing them by forcing them to go out in public with awkward, unconvincing, after-the-fact claims that the speech really did amount to a commitment they knew it did not make.

Holy shit. It’s one thing to lose a battle about what goes into a presidential speech—that happens all the time—but it’s quite another to agree to include something and then remove it without telling your top national security advisors. And then send them out to face the press.

This isn’t a case of Trump listening to the last guy in the room. It sounds more like Trump being unwilling to tell his national security team to their faces that he disagrees with them—and then screwing them behind their backs. How long can you keep working for a guy like that?

The bizarre thing is that what Trump did wasn’t entirely indefensible. It’s obviously not what I (or McMaster or Mattis or Tillerson) would have done, but Trump could have made the case that asking NATO partners nicely for increased defense spending hadn’t worked in the past, and he wanted to tighten the screws. The way to do it is to make everyone just a little nervous by saying nothing about Article 5 one way or the other.

MM&T would have disagreed, but Trump is president and he could have overruled them. Trump took office promising to disrupt the status quo, so they could hardly have been surprised if he had told them he wanted to play a little hardball and that they should be prepared for some blowback. At least then they would have known what to say afterward.

In 3 Months, 3 Immigrants Have Died at a Private Detention Center in California

A Honduran immigrant held at a troubled detention center in California’s high desert died Wednesday night while in the custody of Immigration and Customs Enforcement (ICE). Vincente Caceres-Maradiaga, 46, was receiving treatment for multiple medical conditions while waiting for an immigration court to decide whether to deport him, according an ICE statement. He collapsed as he was playing soccer at the detention facility and died while en route to a local hospital.

Caceres-Maradiaga’s death is the latest in a string of fatalities among detainees held at the Adelanto Detention Facility, which is operated by the GEO Group, the country’s largest private prison company. Three people held at the facility have died in the last three months, including Osmar Epifanio Gonzalez-Gadba, a 32-year-old Nicaraguan found hanging in his cell on March 22, and Sergio Alonso Lopez, a Mexican man who died of internal bleeding on April 13 after spending more than two months in custody.

Since it opened in 2011, Adelanto has faced accusations of insufficient medical care and poor conditions. In July 2015, 29 members of Congress sent a letter to ICE and federal inspectors requesting an investigation into health and safety concerns at the facility. They cited the 2012 death of Fernando Dominguez at the facility, saying it was the result of “egregious errors” by the center’s medical staff, who did not give him proper medical examinations or allow him to receive timely off-site treatment. In November 2015, 400 detainees began a hunger strike, demanding better medical and dental care along with other reforms.

Yet last year, the city of Adelanto, acting as a middleman between ICE and GEO, made a deal to extend the company’s contract until 2021. The federal government guarantees GEO that a minimum of 975 immigrants will be held at the facility and pays $111 per detainee per day, according to California state Sen. Ricardo Lara (D-Bell Gardens), who has fought to curtail private immigration detention. After that point, ICE only has to pay $50 per detainee per day—an incentive to fill more beds.

Of California’s four privately run immigration detention centers, three use local governments as intermediaries between ICE and private prison companies. On Tuesday, the California senate voted 26-13 to ban such contracts, supporting a bill that could potentially close Adelanto when its contract runs out in 2021. The Dignity Not Detention Act, authored by Lara, would prevent local governments from signing or extending contracts with private prison companies to detain immigrants starting in 2019. The bill would also require all in-state facilities that hold ICE detainees, including both private detention centers and public jails, to meet national standards for detention conditions—empowering state prosecutors to hold detention center operators accountable for poor conditions inside their facilities.

An identical bill passed last year but was vetoed by Gov. Jerry Brown. “I have been troubled by recent reports detailing unsatisfactory conditions and limited access to counsel in private immigration detention facilities,” Brown wrote in his veto message last September. But he deferred to the Department of Homeland Security, which was then reviewing its use of for-profit immigration detention. In that review, the Homeland Security Advisory Council rejected the ongoing use of private prison companies to detain immigrants, citing the “inferiority of the private prison model.” Yet since President Donald Trump took office, the federal government has moved to expand private immigration detention, signing a $110 million deal with GEO in April to build the first new immigration detention center under Trump.

Nine people have died in ICE custody in fiscal year 2017, which began October 1. Meanwhile, private prison stocks have nearly doubled in value since Election Day.
