Tom’s Kitchen: Fried-Egg Taco With Fried Snap Peas and Radish Flowers

To garden is to accept chaos. Soil, seeds, weather, fauna—these are just a few factors that interact in complex and unpredictable ways, generating results we can influence but ultimately can’t control. Add the frailty of human judgment to the mix, and gardening is a kind of crapshoot. For the kitchen gardener, when the harvest disappoints, you have to react creatively—in short, to turn your errata into something delicious to eat.

This spring here in Austin, we planted snap peas too late. The tendrils gamely snaked their way up their trellises, but by the time the plants flowered, the weather had become too hot for the buds to set much in the way of fruit. Something similar happened with the radishes, planted on the same late date: They grew robust tops, but very few of them had sufficient time to develop full root bulbs before the heat set in. Harvesting them became a low-odds gamble: for every four you picked, just one presented a crunchy, spicy red orb. The other three showed a spindly root, earning a trip straight to the compost pile.

Well, not always. For a couple of weeks, the radish tops have been so green and healthy that I’ve been sautéing them like I do kale or chard. They cook fast and have a pungent flavor, easing the sting of the largely failed root harvest. Then the remaining radish tops went to seed and sprouted pretty purple flowers. When I snapped off a bud and tasted it (in the garden as in the kitchen, one should Always Be Tasting), I found it peppery, reminiscent of mustard greens (a related plant) and tender. And so, another unexpected harvest—for several days, I’d go out to snip a few to add, chopped, to salads.

Finally this weekend, the time came to pull out the lingering spring garden, removing the pea and radish plants from the garden to make way for new crops. (I put in a second round of tomatoes, hot peppers, melons, and cucumbers.) As I uprooted the pea shoots, I noticed a few more remaining snap peas than I expected. I tasted one. It delivered a burst of sweetness and the bright flavor that I can only describe as “green”—the thing that makes sugar snap peas maybe the most beloved spring vegetable. The problem: The pod had become slightly wizened in the hot sun, a bit too fibrous and impossible to chew all the way. Nothing that a bit of cooking won’t fix, I noted as I snatched a couple of handfuls worth of delicious-but-tough snap peas out of the foliage.

Then I snipped all the remaining flowers from the radish plants before yanking them, too. Among the roots, I collected more keepers than I had expected. I immediately brought my motley treasure into the kitchen for a quick breakfast. (Note: these ingredients would also work well in a stir fry or a pasta.) Of course, you probably don’t have access to aged snap peas or radish flowers; but if you garden, I bet there are some exciting flavors lurking out there in odd places, waiting to be liberated.

Fried-Egg Taco With Fried Snap Peas and Radish Flowers

Makes 1 taco

1 radish, chopped (garnish)

1 clove of garlic, crushed, peeled, and chopped fine
A good handful of slightly tough sugar snap peas, stem ends removed, and chopped coarsely
A good handful of radish (or other brassica) flowers, chopped coarsely
Olive oil
Sea salt
A pinch of crushed chili pepper
Black pepper
Red chili pepper

1 quarter-inch slice of butter (cut from a stick of it)
1 egg
Sea salt
Black pepper
A pinch of crushed chili pepper

1 tortilla (I use whole-what ones from Margarita’s Tortilla Factory of Austin)

Heat a cast-iron or other heavy-bottomed skillet over medium flame. Add enough olive oil to cover the bottom and stir in the garlic, the chili pepper, a pinch of salt, and a grind of pepper. Stir for a minute, being careful not to let the garlic burn. Add the snap peas and toss, cooking them for a minute or two. Add the radish flowers. Cook, tossing and stirring, until the snap peas are tender (they should retain a decent crunch). Marvel at the interplay between the sweet peas and the mustardy radish flowers.

Meanwhile, place a small skillet over medium heat and add the butter. When it has melted, swirl the pan to coat. Let the pan get good and hot. Crack an egg and add it to the pan. Give it a dusting of salt, black pepper, and chile pepper. Turn heat to low and cook until whites are fully set. Flip the egg and cook to desired doneness (I like the yolk to be a little runny.

Meanwhile, heat the tortilla in yet another small skillet or comal (or over the open flame of a gas burner) over medium heat, flipping it to brown on both sides.

Assemble the taco: Slip the fried egg into the folded tortilla and enough of the radish-flower/snap pea mixture to fill it. Serve the remainder on the side. Garnish with the chopped radish.

Tom’s Kitchen: Spaghetti with Butternut Squash, Bacon, and Chickpeas

September in Austin is a bit like February in northern climes: months of harsh weather have turned the farmers market into a study in austerity. Here in Texas, tomatoes are mostly gone, done in by the unrelenting heat. Greens are as rare as rain. Eggplant, zucchini, and melons soldier on. And on.

A few weeks ago, one of my favorite vegetables began to appear at farm stands: butternut squash. The trouble was, the idea of whipping up—much less eating—a butternut squash soup on a 100+ degree day had all the appeal of sporting a down parka at a swimming hole.

At a recent Sunday farmers market, I broke down and bought one of the squashes anyway, desperate for new flavors. I figured I’d find something appealing to do with it. And then, fall—or at least a preview of it—arrived in the form of a day-long rainstorm. The temperature barely cracked 80 degrees: a veritable cold front! So I decided to combine that one butternut squash with a little slab of bacon I bought from the excellent Austin butcher Dai Due into an autumnal pasta.

To bring the sweet smokiness of the squash/bacon combination to the fore, I deployed an old Mark Bittman trick: I used half the amount of spaghetti that a typical recipe would call for. If you want to feed more people, you could get away with using a full pound of pasta. Just add additional lashings of olive oil and cheese to ramp up flavor. Substitution note: Try swapping the pasta for farro—see here for more on that excellent grain.

Spaghetti with Butternut Squash, Bacon, and Chickpeas
(Yields three generous portions.)

Extra-virgin olive oil

6 oz. bacon, preferably from pastured hogs, diced into quarter-inch bits

1 large butternut squash, cut into half-inch chunks
Sea salt and freshly ground black pepper

8 oz. spaghetti
4 cloves garlic, mashed flat, peeled, and finely chopped
A pinch or two, to taste, of crushed chili flakes
1 15 oz. can of chickpeas, drained (cannellini beans would also work well)
A wedge of Parmesan, grano padano, or other hard cheese
1 bunch parsley, chopped

Preheat oven to 375 degrees. Place a large, oven-proof skillet—one big enough to hold the squash in one layer—over a medium flame. Add barely enough olive oil to cover the bottom of the skillet. When it’s hot, add the bacon and cook, stirring often, until brown and crisp. Remove with a slotted spoon and set aside, leaving the heat on.

Add the squash to the hot pan and gently toss until it’s sizzling and coated in fat. (If there isn’t enough fat left in the pan from cooking the bacon, add a bit of olive oil.) Add a small pinch of salt—go easy, because bacon is salty—and a generous grinding of pepper. Toss the squash one more time to make sure the pieces are laid out more or less in one layer.

Place the pan in the heated oven. Cook, tossing occasionally, until the squash is tender and lightly browned, 15 to 20 minutes.

Meanwhile, get the pasta going. (I use Harold McGhee’s low-water, high-speed method.)

When the squash is done, take the pan out of the oven and mix in the chopped garlic and crushed chili flakes. Let it sizzle for a minute or two, as the pan’s residual heat cooks the garlic. Now add the drained beans, a ladle of pasta water, the cooked bacon, a good grating of cheese, and toss it all together.

When the pasta is done, drain it and combine with the squash mixture. Add the chopped parsley, and toss until well combined. Taste for seasoning, adding salt, pepper, and chili flakes as needed. If the dish seems a little dry, add a glug of olive oil.

Pass around the block of cheese and the grater as you serve. This dish goes well with a sturdy red wine—maybe one from France’s Rhône region.

Tom’s Kitchen: Chipotle-Rubbed Grilled Whole Chicken

Because I’ve lived in two meccas of smoked meat—Central Texas and North Carolina—people often ask me for tips on barbecue at this time of year. Here’s the thing: barbecuing is long, smoky cooking over low heat. If you want to get the flavor of how to do it, check out the “Fire” chapter of Michael Pollan’s new book Cooked. The chapter ends with Pollan smoking a whole hog overnight in his backyard—a tricky process that takes practice, skill, and lots and lots of time. For me, barbecue is like beer: its making is best left to pros and obsessive amateurs.

Meanwhile, Tom’s Kitchen is devoted to simple home cooking, so you won’t see me devoting a column to proper barbecue anytime soon. But that doesn’t mean I don’t like to have a bit of fun with fire and smoke. What people usually have in mind when they ask me about barbecuing is really what should be called grilling—essentially, roasting over charcoal. (I’ve been told grilling also happens over gas flame, though that concept is foreign to me.) What follows is a dead-simple way to turn a whole chicken into a cookout through the magic of butterflying—cutting out the backbone with a sturdy pair of kitchen shears. Don’t be intimidated. It only takes about 15 seconds and it gets you a moist, evenly cooked bird with a crisp skin.

You can take your butterflied chicken party in many different directions. You could slather it in a barbecue-style sauce before crisping off the skin and serve it with slaw and other traditional ‘cue sides; you could go Mediterranean and marinade it in lemon zest and chopped rosemary and serve with a fresh salsa verde (essentially a parsley pesto); or do as the recipe below suggests, which is to look south to Mexico for inspiration. I hacked the meat up for tacos, and served with tortillas, guacamole, and a charred-tomato sauce.

Grilled Whole Chicken with Charred Tomato Sauce

Prep and marinade bird

2 cloves of garlic, crushed and peeled
½ teaspoon powdered hot chile pepper (could be paprika, smoked paprika, or ground chipotle pepper—I used the latter)
½ teaspoon of cumin, ground
A bit of fresh oregano if you have some on hand
½ teaspoon sea salt
Several generous grinds of coarse black pepper
I tablespoon of olive oil
1 4-pound chicken, preferably raised on pasture

Place the first five ingredients, garlic first, into a mortar and pestle. Pound the garlic into a rough paste. Add the oil, and pound a bit more.

Using kitchen shears, carefully cut the backbone out of the chicken (see this Melissa Clark video for an excellent demo), and using your hands, open the chicken outwards and press down down vigorously, flattening it. Now turn it skin-side up and rub the paste all over the skin. Let it sit in the fridge for at least 30 minutes and optimally overnight.

Prep the grill

Get some good hardwood charcoal going by whatever method you prefer—I use a chimney. When the coals are white-hot, collect them on one half of the grill basin. The goal is to create a hot side and a cool side. Put the grated grill top, which should be clean, in its place and let it heat up for a minute or two.

Prep the salsa

6 medium-sized, ripe tomatoes
1 clove garlic, crushed and peeled
1 to 2 fresh jalapenos or serrano chiles, roughly chopped
Sea salt to taste

Put the garlic, half of the chopped chiles, and a pinch of salt in a food processor and set aside—you’ll run the blade after adding roasted tomatoes.

Grill time

Place the butterflied chicken, skin side up, on the cool side of the grill, and the tomatoes on the hot side. Cover with the grill lid. Let the tomatoes cook, turning and recovering the grill as needed, until nicely charred all over. Add them to the food processor and whiz until you have a smooth salsa. Check for seasoning—add and process more chile pepper and salt if needed.

Meanwhile, leave the chicken cooking on the cool side, covered, until a meat thermometer plunged into the deepest part of a thigh reads 105 degrees. When it reaches that temperature, you’re ready to crisp off the skin. Simply flip the bird over, skin-side down, onto the hot part of the grill and let it cook there until he skin is crisp and caramelized and the thigh temperature reads 180 degrees.

Let it rest off the grill for 20 minutes before cutting the meat off he bones into taco-ready chunks. Serve with the salsa plenty of hot tortillas.
