Diet and Climate Change: Cooking Up a Storm

One of the most prestigious medical journals in the world editorialized that climate change represents the biggest global health threat of the 21st century. Currently, chronic diseases are by far the leading cause of death. Might there be a way to combat both at the same time? For example, riding our bikes instead of driving is a win-win-win for the people, planet, and pocketbook. Are there similar win-win situations when it comes to diet?

As I discuss in my video below, the foods that create the most greenhouse gases appear to be the same foods that are contributing to many of our chronic diseases. Researchers found that meat (including fish), eggs, and dairy had the greatest negative environmental impact, whereas grains, beans, fruits, and vegetables had the least impact. And not only did the foods with the heaviest environmental impact tend to have lower nutritional quality, but they also had a higher price per pound. So, avoiding them gives us that triple win scenario.

The European Commission, the governing body of the European Union, commissioned a study on what individuals can do to help the climate. For example, if Europeans started driving electric cars, it could prevent as much as 174 million tons of carbon from getting released. We could also turn down the thermostat a bit and put on a sweater. But the most powerful action people could take is shift to a meat-free diet.

What we eat may have more of an impact on global warming than what we drive.

Just cutting out animal protein intake one day of the week could have a powerful effect. Meatless Mondays alone could beat out a whole week of working from home and not commuting.

A strictly plant-based diet may be better still: Its responsible for only about half the greenhouse gas emissions. Studies have suggested that moderate diet changes are not enough to reduce impacts from food consumption drastically. Without significant reduction in meat and dairy, changes to healthier diets may only result in rather minor reductions of environmental impacts. This is because studies have shown that the average fossil energy input for animal protein production systems is 25 calories of fossil energy input for every 1 calorie producedmore than 11 times greater than that for grain protein production, for example, which is around 2 to 1.

Researchers in Italy compared seven different diets to see which one was environmentally friendliest. They compared a conventional omnivorous diet adhering to dietary guidelines; an organic omnivorous diet; a conventional vegetarian diet; an organic vegetarian diet; a conventional vegan diet; an organic vegan diet; and a diet the average person actually eats. For each dietary pattern, the researchers looked at carcinogens, air pollution, climate change, effects on the ozone layer, the ecosystem, acid rain, and land, mineral, and fossil fuel use. You can see in the video how many resources it took to feed people on their current diets, all the negative effects the diet is having on the ecosystem, and the adverse effects on human health.

If people were eating a healthier diet by conforming to the dietary recommendations, the environmental impact would be significantly less. An organic omnivorous diet would be better still, similar to a vegetarian diet of conventional foods. Those are topped by an organic vegetarian diet, followed by a conventional vegan diet. The best, however, was an organic vegan diet.

The Commission report described that the barriers to animal product reduction are largely lack of knowledge, ingrained habits, and culinary cultures. Proposed policy measures include meat or animal protein taxes, educational campaigns, and putting the greenhouse gas emissions information right on food labels.

Climate change mitigation is expensive. A global transition to even just a low-meat diet, as recommended for health reasons, could reduce these mitigation costs. A study determined that a healthier, low-meat diet would cut the cost of mitigating climate change from about 1% of GDP by more than half, a no-meat diet could cut two-thirds of the cost, and a diet free of animal products could cut 80% of the cost.

Many people arent aware of the cow in the room. It seems that very few people are aware that the livestock sector is one of the largest contributors to greenhouse gas emissions. But thats changing.

The UKs National Health Service is taking a leading role in reducing carbon emissions. Patients, visitors, and staff can look forward to healthy, low-carbon menus with much less meat, dairy, and eggs. Evidence shows that as far as the climate is concerned, meat is heat.

The Swedish government recently amended their dietary recommendations to encourage citizens to eat less meat. If we seek only to achieve the conservative objective of avoiding further long-term increases in [greenhouse gas] emissions from livestock, we are still led to rather radical recommendations such as cutting current consumption levels in half in affluent countriesan unlikely outcome if there were no direct rewards to citizens for doing so. Fortunately, there are such rewards: important health benefits… By helping the planet, we can help ourselves.

How to Compost at Home

In the old Brothers Grimm tale Rumpelstiltskin, a miller swears to the king that his daughter can spin straw into golda bold-faced lie.With the help of the eponymous imp and his magical powers, the daughter was eventually able to spew gold from her very fingers. But, she had to promise her firstborn child to him in order to receive the special talent.

In the real world there is one way to turn straw into gold, so to speak, that doesnt require any special powers or bargaining with a frightful creatureits known as composting. Creating organic fertilizer from food scraps happens to be much easier than most people think. Heres everything you need to know:

WHAT IS COMPOSTING?

In basic terms, composting means recycling plant scraps from the kitchenincluding carrot tops, potato peels, herb stems, celery fronds, eggshells, coffee grounds, used tea bagsall in the effort to minimize waste and to make garden fertilizer. The process transforms such food scraps, which would have normally ended up in the garbage, into a nutrient-rich mulch that can be added to soil and help you grow even more fruits and vegetables, thereby perpetuating the cycle. Now thatssustainability at its finest.

How it works

As organic materials decompose, they break down into nutrients like nitrogen, phosphorous, and potassiumthe same compounds plants need to thrive. Brown matter, like dead leaves and branches, provide carbon while green matter, like vegetables and fruits, provide nitrogen. Compost piles and bins ideally consist ofthree parts brown matter to one part green matter.

When these organic materials are exposed to air and water, microorganisms likebacteria, actinobacteria, fungi, protozoa, and earthwormsstart to break them down into compost. Carbon gives these microbes energy, and nitrogen facilitatesprotein synthesisa biological process where individual cells build up their specific proteins..

After these microorganisms break down the plant matter, what youre left with is a substance calledhumus(no, not hummus) which basically looks, smells, and feels like dark, moist soil. Spread a thick layer of it on top of the soil in your garden and watch your plants flourish! (Well get to more specifics below.)

COMPOSTING BENEFITS

Reduces and recycles kitchen and yard waste

One of the greatest benefits of composting is giving food scraps and yard waste another life. Instead of going straight to a landfillwhere40 percent of all food produced in the U.S. ends uptheyll serve a new purpose and nourish your garden naturally and even help you to cultivate more food.

Good for the environment

Compost can serve as a natural alternative to chemical fertilizers, which oftenseep into groundwater and end up polluting waterways.

Conditions and fertilizes soil

Compost helps give soil a softer, looser texture, which allows water and nutrients to reach the plants roots more efficiently. Its all thanks to those beneficial microorganisms, which can evenkill pathogensand prevent plant disease, according to theEnvironmental Protection Agency.

WHAT TO COMPOST

Heres what can (and cant) go into your compost heap,according to the EPAandRodales Organic Life.

Brown matter

These are generally dry ingredients that are rich in carbon:

Cardboard
Corn husks
Cotton
Dead leaves
Hay
Nutshells
Paper
Pine needles
Sawdust
Shredded newspaper
Straw
Twigs
Wood ashes
Wood chips
Wool

Green matter

These tend to be wet and are rich in nitrogen:

Algae
Bread
Coffee grounds and filters
Dead plants
Eggshells
Freshwater aquarium water
Fruits
Fur
Grains (cooked, plain)
Grass clippings
Hair
Seaweed
Tea bags
Vegetables

WHATNOTTO COMPOST

These materials may be harmful to the health of your compost:

Black walnut tree leaves and twigs
Charcoal
Dairy products
Diseased plants
Dryer or vacuum lint from synthetic fabrics
Fats or oils
Glossy paper (especially with color printing)
Meat or fish scraps or bones
Pet waste

HOW TO COMPOST

Its easy to start composting at home. Whether you have a big backyard or live in an apartment with minimal outdoor space, heres how to do it.

Composting in a backyard

1. Pick a spot

The first step is to pick a dry, sunlit area outdoors and near a water source (like a garden hose). Since compost tends to be smelly, be mindful and choose a spot where the appearance or smell wont bother your neighbors. Its best to keep it far away from anywhere you eat or entertain, too. You should also avoid placing it near the house or any other wooden structures, as the decomposing materials can rot wood.

2. Dig a hole or buy a compost bin

If you dont mind letting your compost heap sit exposed, its a good idea to dig a hole in the ground to make it easier to manage. Make sure the hole measures at least 3 x 3 x 3.

You can buy a holding unit or bin at Thrive Market, likethis one here. Or you can get crafty and check out how tomake a DIY version. A closed bin with a lid also worksjust drill holes into the lid to allow air in, and add your own worms (you can pick those up at home and garden stores, too).

3. Start adding organic materials

Add compostable materials in alternating layers, starting with brown matter, then green matter, and some brown again. Try to maintain a ratio of three parts carbon (brown) to one part nitrogen (green). Too much carbon can slow down the decomposition, while too much nitrogen can make the pile slimy, smelly, and difficult to aerate.

4. Turn and add water

If you arent continually adding new matter, let it sit for five weeks. Then, turn it with a pitchfork or rake to oxygenate the mixture, and add enough water to dampen the pile. (Excess moisture hinders airflow, and too little prevents the microorganisms you need to start decomposition from thriving.) Leave it for three or four months longeritll turn into dark, moist soil, which is your key to know its ready to use.

Most people, however, tend to add new materials throughout the year. In this case, whenever you add new food waste or kitchen scraps, bury it to incorporate. Turn and moisten the pile at least every four to five weeks, but keep in mind that turning more often can really speed up the decomposition process.

Composting indoors or in an apartment

No backyard? No problem. You can make your own small-scale composting system indoorsand you dont even need worms. Heres how:

What you need

Small trash bin with a lid
Tray that fits underneath trash bin
Soil
Newspaper

Instructions

Choose a space to keep your compost bin. (Under the sink works well.)
Poke or drill a few holes on the bottom and around the rim of the bin.
Cover tray with newspaper and place the bin in the tray.
Add a layer of soil, a few inches deep, into the bin.
Add a layer of shredded newspaper into the bin.
Start adding your food scraps (green matter as listed above), along with a handful of newspaper or other brown matter as you go. (If it starts to smell bad, add more brown matter.)
Once a week, mix the pile and add a handful of fresh soil.

Youll know the compost is ready when its broken down into dark, moist soil. Use it as a top layer for potted plants or donate whatever you cant use to a neighborhood garden.

TOP COMPOSTING TIPS

Here are some important things to know before getting started to make your composting a success.

Start your compost in summer:The process works best in heata compost pile that maintains an internal temperature of 130 to 150 degrees Fahrenheit breaks down faster.
Keep a small compost bin in the kitchen:Its a convenient way to collect food scraps without having to run out to the compost pile every time you have something to add. Once your indoor bin is filled, you can throw it all into the pile at once.
Always keep a healthy balance of of carbon to nitrogen (brown to green):Remember its three parts brown to one part green. Too much or too little of either can slow things down.
The smaller the materials, the better:Before adding things into the compost, cut them down to smaller chunks to help them decompose faster.
Dont pack too much waste in:The pile needs air to breathe.
The more green matter you use, the less water you need:Remember that too much water keeps the air from flowing freely through the mixture.
Do not compost pet waste:It can contain parasites.
Do not compost meat, meat scraps, fats or oils:Otherwise pests will come crawling and potentially spread disease through the compost.
Wormsare your friends:When these guys show up, leave them be and let them do their thing. Theyll feed on your food waste and help turn it into the beautiful compost youve been waiting for.
You can compost weeds:Just make sure they dont have seeds, or else you may get some pesky plants cropping up in your garden.
Turn your pile frequently:Aerating the compost as often as every two weeks can really speed up the process.
Keep two separate compost piles:Got a lot of organic material and extra space? Starting a second pile is handy so you can let the original one break down faster while continuing your composting habit.
Add compost to the garden two to four weeks before planting:This allows time for it to meld with the soil. Once youve got it all ready to go, its time to plant theseeds. When beautiful, bright-orange carrots grow in, youll be pretty happy you didnt trash those old peels.

What Would Happen if the World’s Soils Disappeared?

The United Nations designated December 5th as World Soil Day to raise awareness about the dangers of soil loss. Youve likely heard about the environmental importance of soils. But how important are they, really? Lets take a quick look at how losing our precious soils would impact the world.

Could soil ever actually run out?

Yes. If we continue to harm and degrade topsoil at the current rate, its estimated that the world could lose all its topsoil within 60 years.

Topsoil is the uppermost layer of soil on the surface of the earth. Its the most fertile type of soil that typically contains lots of nutrient-rich organic matter from broken down plants and other organisms. Topsoil is also alive with beneficial microbes, fungi and critters like earth worms, which feed on the organic matter.

The deeper layers of soil beneath the topsoil are not nearly as rich. They are primarily made up of decomposing rock that provides the raw material for future topsoil as well as a substrate for deeply rooted plants to anchor in.

If the delicate ecosystem within topsoil is disrupted, it will essentially die. Plants cant grow in topsoil that doesnt have abundant organic matter and thriving populations of microbes.

Agricultural Affects

Modern agricultural practices often use chemical fertilizers instead of organic matter. This does not feed the soil. It only provides a quick blast of limited nutrients that the plants soon consume. Whereas, plant debris and other organic matter will slowly break down and provide ongoing nutrition for growing plants and soil microorganisms.

The organic matter content that was once naturally high in topsoil is becoming more and more depleted as industrial farming practices continue. Due to this, topsoil is being lost between 10 and 40 times the rate at which it can be naturally replenished.

If this continues, agricultural soils will become less fertile and it will be more difficult to grow food. In areas where this is already happening, forest and wild areas are often being destroyed in order to make more agricultural land. Deforestation like this reduces organic matter in the soil even more, making the problem worse.

The extreme outcome of topsoil degradation would be widespread food shortages because depleted soils cant produce enough crops to provide food for everyone.

Impact on Water

Healthy topsoil will naturally retain water. Organic matter helps to maintain a good structure within soil that can absorb and release water as needed by the plants and surrounding ecosystem.

A few issues can start when topsoil becomes degraded. Flooding is perhaps the most dramatic result. When a landscape cant hold water, rainfall can only run off the surface and eventually wind up in the ocean. It will also cause erosion and take a great deal of soil with it.

Poor topsoil also creates a need for more irrigation. Many parts of the world already have water shortages, so an increased pressure on the local water supplies could lead to serious problems.

Plant and Animal Losses

If we lost the health of our soils, significant amounts of wild plants would die off around the world. This would clearly be a massive blow to biodiversity, habitat for animals and food sources. But it could also have a significant impact on climate change.

Plants naturally take in carbon dioxide and release oxygen. This is the primary way carbon is removed from our atmosphere. If plant populations collapsed around the world, there could be a huge increase in the amount of circulating carbon.

Another issue is that all living things release carbon when they die, so any large-scale plant and animal die-offs would produce carbon as the organisms decompose. High levels of carbon dioxide in our atmosphere have already been linked to climate change and global warming. Mass die-offs would only add to this problem and potentially lead to more severe climate change.

How can we stop all this from happening?

Plant more plants. This is a vital step towards helping the worlds soils. More plants will create more organic matter, which will feed more soil microorganisms and keep soils thriving. You can start in your backyard or volunteer with an organization that reclaims and replants degraded areas.

Learn about soils. A lot of the damage done to our soils has been out of ignorance or simply taking whats under our feet for granted. But the more we can all learn about soil, the better well be able to take care of it.

Minimize hard surfaces. Large areas of pavement or other hard surfaces cause increased soil erosion around the edges and create soil dead spaces underneath. Consider making driveways, decks or sidewalks with paving stones or other materials that allow water to flow through them and the soil underneath to breathe.

Make a rain garden. This is a shallow depression you can create in your yard that will capture excess rain water and prevent soil erosion. You can plant moisture-loving plants in your rain garden, or leave it to provide water for animals.

Support your local farmers. Small-scale agriculture is often better for the health of soil. Many small farmers take the health of their land very seriously and promote fertility by non-chemical, sustainable means. Get to know the farmers at your local market and ask how they support their soils. Or better yet, go to visit their farms and check out the soil yourself.

Recycle human waste. It may be a solution no one wants to talk about, but a huge amount of organic matter that could go back into our soils is currently being flushed down the toilet. This has prompted a movement to make use of whats known as humanure, or human manure. The Humanure Handbook by Joseph Jenkins is a great place to start if youd like to explore this option.

16 Ways to Make Your Bathroom More Eco-Friendly

Making your bathroom more water- and energy-efficient might not seem sexy, but it can make a big difference in your home’s utilitybills and environmental impact. These are somebig and small ways to make your bathroom more eco-friendly.

When we’re talking about making any room more eco-friendly, there are really two things going on:

  1. The things in the room.
  2. Your habits in the room.

16 Ways to Make Your Bathroom More Eco-Friendly

1.Stop theleaks. Running toilets and leaky faucets are more than just an annoyance. In fact, when you add up all of the little water wasters like these across the U.S., it adds up to over 1 trillion gallons of water per year. If you have a leak or suspect one, get a plumber in as soon as you can to repair it or take a stab at repairing it yourself.

2. Go low flow. This is an affordable way to make your bathroom more eco-friendly that almost anyone can do. Installing a low flow faucet on the bathroom sink or your showerhead is incredibly easy. Really, it is. I’ve done it, and if I can do it,I’m betting that you can, too.

3. Go dual flush.If you’ve got the budget,this is a big water saver. Dual flush toilets use around half the water to flush liquid waste compared to standard toilets. If getting a new toilet is not in your price range, you can buy kits like this one to convert a regular toilet to dual flush.

4. Go old school. If you want a really low-tech solution to reduce the water your toilet uses, put a small plastic bottlefull of water into the tank, so it won’t fill withas much water. Back in the 90s, some people put bricks into their tanks to displace some of the water. Do not do this! A brick erodes over time and will mess up your toilet.

5.Skip abath.Unless you take very long showers (16 minutes or more), a bath uses far more water to get you clean than a shower.Take showers instead of baths to rack up the water savings! This will also save energy, since you bathe in hot water. Reducing hot water usage is a double whammy, saving you water and energy.

6. Skip a shower.Showers use less water than baths, but afive minute shower still uses about 12.5 gallons of water. Sure, if youwent for a run or worked in the garden, you probably need a shower. But if you just hung out watching TV or even worked in an office all day, do you really need a daily shower? Even skipping one shower a week makes a difference!

7. Get an efficient water heater. Whether you’re taking showers or baths,you’re taxing your home’s hot water heater. Heating water accounts forabout 20 percent of your home’s energy costs, so getting a better heateris a great way to make your bathroom (and kitchen and laundry room) more eco-friendly. Consumer Reports has a great guide to the best water heaters. If you can swing it, it looks like a tankless is the best bet from an energy-conservation perspective. Tank water heaters store hot water, meaning they’re constantly running to keep the water hot. A tankless heater only turns on when you turn on the hot water tap.

8. Turn down the water heater. It only takes a couple of hours to reduce the temperature on your water heater, and this fix is free! You don’t need it at 140 degrees Fahrenheit. Turn it down to 120 to save money and energy in the bathroom. The video above shows you how to adjust the temperature on your home’s water heater.

9. Try the shower bucket. Whether you have a tank or tankless water heater, it takes a few minutes for your shower to get hot. Rather than let this water go down the drain, you can collect it in a bucket and use it to water house plants. You can also use the shower bucket when you’re dripping faucets during a winter freeze. Drip the tub faucet instead of a sink, and stick that bucket underneath.

10. Ditch the PVC shower curtain liner. Vinyl shower curtain liners are no good for the planet or for your home’sair quality. PVC liners offgas harmful volatile organic compounds (VOCs) that are bad news for indoor air quality and your health. Unfortunately, PVC shower curtains are not recyclable. The best thing that you can do is toss the old one and replace it with a non-PVC alternative. Companies like Ty even make non-toxic shower curtain liners that you can recycle.

12. Turn off the tap. When you’re brushing your teeth or washing your hands, you don’t need water running while you scrub. A sink faucet uses 2.5 gallons of water per minute. Turn it off until you really need that water to rinse.

13. Stop with the anti-bacterial soap. Anti-bacterial soap is not necessary, and when it rinses down the drain it is an environmental nightmare. It’s no more effective than regular ol’ soap, and there’s even evidence that it weakens heart and muscle function. No, thank you!

14. Choose LEDs. Just like anywhere else in the house, efficient light bulbs add up to big energy savings over time. LED bulbs are a bit of an investment up front, but they last up to50 times longer than incandescents. And unlike CFL bulbs, they don’t contain mercury.

15. Get recycled toilet paper. Do we really need to cut down new trees to wipe our bottoms? No, we don’t. While you’re at it, try to use less toilet paper in general.It still takes energy and water to create a roll of recycled TP.

16. Chooseorganic towels. Next time you have to replace your bath towels, choose organic cotton. Conventional cotton is one of the most water-intensive and polluting crops on the planet. Don’t go out and replace your perfectly good old towels with organic ones, though. The lowest-impact choice you can make is to buy nothing.But when your old towels are starting to fall apart, go organic.
