Celebrate America by avoiding our national embarrassment: Hot dogs

Independence Day has historically been a time to remember our forbears, to consider the spectacular achievements this country has made, and to shove approximately 155 million hot dogs down our collective throats. But, this year, I’m begging you: Say no to the weenie, the worst meat of them all.

To be clear, we’re talking about the intestine-colored, colon-shaped sticks of blended gristle that shine in the sun and slide out of the package like a wet worm, not the visually appealing pet of the same name. This is a perfect day to remember that mass-produced processed meats — besides being grotesque amalgams of unwanted animal chunks — are products of an unsustainable and harmful industry.

First things first: What’s in a hot dog? The backyard BBQ staple can contain pretty much any type of meat, but are mainly comprised of pork, chicken, and beef. Specifically, they’re made up of “trimmings”, a word vaguely defined by the U.N. Food and Agriculture Organization to encompass “lower-grade muscle trimmings, fatty tissues, head meat, animal feet, animal skin, blood, liver, and other edible slaughter by-products.”

But meat is only the half of what’s in a hot dog. Here’s what the ingredient list for Oscar Meyer’s “Classic Weiner” looks like:

INGREDIENTS: MECHANICALLY SEPARATED CHICKEN, MECHANICALLY SEPARATED TURKEY, WATER, PORK, CORN SYRUP, CONTAINS LESS THAN 2% OF MODIFIED CORNSTARCH, SALT, SODIUM PHOSPHATES, SODIUM DIACETATE, SODIUM BENZOATE, SODIUM ASCORBATE, FLAVOR, SODIUM NITRITE.

Some of other ingredients frequently added to hot dogs include: meat “extenders”, or non-meat substances containing protein, phosphates, bread crumbs, rusk, and boiled rice.

After the bits of meat cast-offs are ground into a flesh-colored paste, these additives are blended in and the mixture is piped into grillable portions. And voila! What was once a humble salad of pig head and cow foot is now an inscrutable, tubular frankenstein.

Looks aside, hot dogs simply aren’t that good for you. According to the American Cancer Society, “high consumption of processed meats like hot dogs [is] associated with increased risk of colon cancer.” One 2013 study found that participants who ate more than 20 grams of processed meats a day (about half a hot dog), were more likely to die of heart attack or stroke. And earlier this year, the World Health Organization announced that eating processed meats is directly linked with cancer, with a similar risk to cigarettes and asbestos.

Most of the 9 billion hot dogs Americans purchase each year are produced in massive factory farms. In the U.S., about 97 percent of pork — some 65 million pigs — are reared and slaughtered in factory farms. While strides have been made to improve sanitation and animal welfare at these farms in recent years, the industry is known for cramped conditions, overuse of antibiotics, and inhumane conditions. Not to mention factory farming’s contribution to climate change: According to the FAO, animal agriculture is responsible for 18 percent of greenhouse gas emissions — more than all the emissions from transportation.

So this Fourth of July, take a moment to consider the hot dog — that coral-colored pipette of entrails — and maybe think twice. And if none of this convinces you, well, I leave you with this gif of hot dogs being made:

Here’s something we don’t get to say very often here at Grist dot org: Good news, humans!

Remember the hole in the ozone layer? Well, three decades after countries started banning the chemicals destroying it, the ozone layer is on the mend, according to a study published Thursday in the journal Science.

While a full recovery isn’t expected until mid-century, researchers found that the seasonal hole in the ozone layer over Antarctica is shrinking. The hole, which was discovered in 1984, was caused by chemicals known as chlorofluorocarbons, or CFCs, that at the time were found in household goods like hairspray and air conditioners.

The ozone layer, part of the Earth’s stratosphere between six and 30 miles above the planet’s surface, absorbs ultraviolet rays from the sun, and protects us, its thankless inhabitants, from harmful radiation. In fact, life on Earth wouldn’t be possible without the ozone layer.

“Think of [the ozone layer] like a patient with a disease,” said Susan Solomon, MIT chemist and the study’s lead author. “First, it was getting worse. Then it stopped — it was stable but still in bad shape.”

Now, it looks like it’s actually getting better. Congratulations, Earthlings! You’ll survive another day after all.

The Obama administration took a small step on Thursday to prevent coal companies from fleecing taxpayers.

Until now, the biggest coal conglomerates were getting away with scamming the government by selling coal mined on federal land to their own subsidiaries for a discounted, below-market price. Since the government’s royalties from that coal are a percentage of the sale price, that meant the companies were paying lower royalties than they should have been. Forty-two percent of the coal produced in Wyoming’s Powder River Basin — the biggest coal-producing area in the U.S. right now — was being sold through these “captive transactions,” according to Public Citizen, a good government advocacy group.

On Thursday, the Interior Department issued a new rule that puts a stop to that practice.

“One of the things Cloud Peak [Energy] and other coal companies were doing is selling to an affiliate at the mine mouth and then selling it in the export market at a significantly higher price,” says Tyson Slocum, director of Public Citizen’s energy program. This new rule will allow the department to more accurately calculate the “market value” of coal, oil, and gas extracted on public land and make sure it’s getting paid fair royalties. Slocum estimates that this could bring in an additional $300 million per year in royalties.

This is important for two reasons: Corporations should not be stealing from the public, and every penny we undercharge fossil-fuel companies is an implicit subsidy for the dirty fuels that cause climate change. Coal companies are struggling, and instead of throwing them a lifeline that will help them stay in the business of worsening global warming, we should be letting them sink.

Crucially, unlike many other rules issued by federal agencies, this new rule will apply not just to future leases but also to ones that already exist. So even under a coal lease bought five years ago, a company will now have to pay fairer royalty rates going forward.

This is just the beginning of reforms needed to the federal fossil-fuel leasing system. A bigger issue is that coal, oil, and gas lease rates have failed to keep pace with the market, and on top of that they do not factor in the social costs of pollution and climate change. If they did those two things, the cost of fossil-fuel leases would be prohibitive. As it is, the leasing program is a big money-loser for the federal government. Greenpeace estimates that coal leasing alone costs taxpayers some $50 billion per year.

Ultimately, of course, we should be keeping fossil fuels in the ground — especially on land owned by the public. Hillary Clinton has pledged to move toward that goal, but she hasn’t specified a timeline. President Obama and Interior Secretary Sally Jewell have only promised to ensure that the public gets a fair price for fossil fuels extracted from public land, and to align the leasing programs with the administration’s goal of combatting climate change. It’s not clear what exactly either of those things mean. But in January, the Interior Department put a moratorium on new coal leases pending the results of a multi-year environmental review of the leasing program.

Climate activists have made fixing the broken fossil-fuel leasing system their top priority, and clearly more changes will occur, but no one knows how far they will go.

Donald Trump is a very unusual candidate who’s likely to break some of our usual presidential voting patterns. Right? Sure, he’ll get the angry white males that always vote Republican, but other groups might shy away from Trump and vote for the Democratic ticket in larger numbers than usual.

Not so fast, says Alan Abramowitz. If you compare current polls to the 2012 exit polls, it turns out that most demographic groups are split almost precisely the same:

Trump’s highly unusual background, personality, and unorthodox views on certain issues have led to considerable speculation that his nomination could upset normal voting patterns by producing high defection rates among some groups of Democratic and Republican identifiers and putting new states in play in November….These claims are probably mistaken. These data show that the American electorate remains deeply divided along party lines. Democrats and Republicans, including independents who leaned toward each party, differed sharply on economic, cultural, and racial issues. Moreover, Democrats and Republicans, including Sanders Democrats and non-Trump Republicans, held strongly negative feelings about the opposing party’s likely nominee.

I guess we’ll see. I’d like to say that it depends on just what kind of moronic stuff Trump does over the next few months, but that really doesn’t seem to matter much. Anyone still willing to vote for Trump after his antics so far this year is probably going to vote for him no matter what.

A sweaty Arnold Schwarzenegger wanders across a barren wasteland before turning to the camera and jawing out the line, “Less meat, less heat… more life.”

This is a scene in the latest James Cameron flick, a public service announcement for the advocacy group WildAid and the Chinese Nutrition Society, aimed at linking meat eating to climate change. It’s meant to sway people to follow the country’s new dietary guidelines and eat less meat. So far there’s just a “behind the scenes” teaser, and it’s predictably over the top. Animal agriculture isn’t as big a producer of greenhouse gases as Cameron claims. He says it’s the second biggest, but you have to include all farming (plants plus animals) and forest clearance to make ag the second biggest emitter.

Cameron and Schwarzenegger are basically claiming that meat will destroy the world. It would be more accurate to say that, while meat-eating is carbon intensive, animal agriculture is also a key step in making a better world for many poor farmers and underfed kids. But who goes to a Cameron or Schwarzenegger film for nuance? If the flexing Governator can help convince affluent Chinese and rich people around the world that they don’t need meat to be strong, so much the better.

Rufus Wainwright, the son of critically admired folk singers Loudon Wainwright III and Kate McGarrigle, grew up amid a bramble of musical siblings, aunts, in-laws, half-siblings and close family friends. (Wainright also has a daughter with Lorca Cohen, daughter of Leonard Cohen, whom he co-parents along with his husband.)

While maintaining the family legacy of incisive songwriting, Rufus has stood on his own as a genre-expanding songwriter, incorporating elements of classical music, opera, and the American songbook into visceral contemporary music, beginning with his self-titled debut in 1998.

He has made those influences more explicit during the last decade with 2007’s Rufus Does Judy at Carnegie Hall—a live, song-for-song re-creation of Judy Garland’s Live at Carnegie Hall album, and an opera, Prima Donna, which Wainwright composed and produced in 2009 and released as an album in 2015.

Earlier this year, Wainwright released another classical work, All My Loves, which presents nine Shakespeare sonnets in both dramatic recitations and composed arrangements. The eclectic treatment under producer/arranger Marius de Vries—who previously collaborated on Wainwright’s lush albums Want One and Want Two—involves a varied cast that includes soprano Anna Prohaska; pop singers Florence Welch (of Florence & the Machine) and sister Martha Wainwright; and the actors Helena Bonham Carter, Carrie Fischer, and William Shatner. I caught up with Wainright recently as he swung though New York to reprise Rufus Does Judy at Carnegie Hall. He is now touring in Canada and Europe.

Mother Jones: Shakespeare’s sonnets explore longing, betrayal, and lust and its consequences, themes that are present in your songs as well. Did you have a sense of that connection as you worked on this project?

Rufus Wainwright: I feel like the sonnets are the gift that keeps on giving. Certainly in terms of my life—anybody’s life—you go through death, childbirth and marriage, glory and defeat, and so on. The last 10 years for me have been all of that, so the sonnets have been there with me. I’ve been able to lean on them profoundly for many years, and they’ve given me a wider perspective of what’s going on, really, on the inside. If my songs can do that as well, then I’m a lucky guy.

MJ: You began working on musical settings for the sonnets some years ago, while your mother was fighting cancer.

RW: I wrote the music for the majority of them during her illness. It wasn’t planned out that way, just coincided. But I was happy to not have to write lyrics while that was going on in my life—it was so painful.

MJ: Part of the scholarly debate about the sonnets is whether they were autobiographical or written on behalf of someone else. Do you feel there are parallels in songwriting, the autobiographical vs the universal?

RW: I wouldn’t categorize my work as mysterious as the relationship between Shakespeare and his world, because that is one of the great mysteries: How could someone have written all that he did? Was it only one person? And why do we know so little about it? I don’t take that mantle, but I will say that I strive for what you do find in Shakespeare’s work—that there is a definite humanity and a definite character behind the writing in the sonnets, and it’s very real because it’s so deeply personal. I try to aspire to that in what I do.

MJ: Are there qualities in his material that you are trying to bring into your songwriting?

RW: I can’t really gauge that. I just keep chugging along and I hope that in doing work with the sonnets or the operas—or singing Judy Garland shows—that all gets in there. It’s not up to me to judge that, either; that’s for the public to do. But I want to deepen as an artist, and working with Shakespeare definitely points in that direction.

MJ: Sonnet 20, which addresses the “master-mistress of my passion,” is most discussed and interpreted in context of homosexuality, and the longing of one man for another. What’s your take on it?

RW: I think it is about attraction in general. That’s what is so brilliant about it. There’s no question that the writer projects a sort of startling situation in that because he’s a man he can’t quite do all that he wants to with this other man. But he focuses more on the effect of beauty—what it makes one do emotionally and how it breaks down the barrier between man and woman. That’s part of the subtlety that Shakespeare is the best at, ever, in any art form.

MJ: Something that perhaps was under-noticed on your earlier pop albums is how much classical music is a part of it. For example, the opening track of Want One, “Oh What A World,” takes directly from Ravel’s Bolero. When did you first start to integrate classical into your pop songwriting?

RW: My love of classical hit pretty early. I was 13 when it occurred, and that was really the only music I listened to for many, many years. I went to a conservatory, but I always knew I would be in the pop world, because A) it was more fun and B) you didn’t have to practice as much and you could go out more. But I immediately saw this opportunity to inject my material with these sounds that most members of my generation really didn’t know about, so it was a great way to differentiate myself from the pack. Now I’m paying back the favor a little bit.

MJ: Tell me about your collaborations with Marius de Vries.

RW: Marius is one of the great and most versatile musicians of our time. He’s really able to keep a keen eye on what’s going on in the pop world, but by the same token introduce all sorts of musical influences be they classical, ethnic music, or whatever—so he’s a great unifier. I really needed someone like that to do this album because I’m going out on so many limbs.

I let him go out and see what he can bring back, and oftentimes it’s great, and sometimes we know immediately it won’t work. We give each other a lot of leeway because we respect each other’s taste, and also sometimes our lack of taste, because we’re not afraid to do things a little out of the ordinary.

MJ: This new album takes a very eclectic approach, both in the performers involved and the musical settings.

RW: I feel that the sonnets can take it. They are so wildly varied and so sturdy in terms of their form and geometry and light, so it was fun to throw all these different musical styles at them and see what sticks. And of course they all stick if you do a good job at it, because they are limitless.

MJ: As a husband and father, have you had to temper your artistic ambitions?

RW: The only big change is that I have to rest a lot more now! I think my imagination and my passions are still firing away, but it’s really the body that starts to make up the rules. It’s not a major problem; it’s just when you get a little older you realize how much your body thanks you when you are good to it. I haven’t changed much.

MJ: Judy Garland was coming out of a rough time when she made those live recordings. Do you feel any affinities with her and where she was in her life at that time?

WR: Well, I have a lot of advantages: I’m not addicted to horrifying pills. I also have surrounded myself with far more caring and upright individuals. And I wasn’t abused as a child, so I’m doing okay!

MJ: Sorry, I wasn’t trying to put you in the same redemptive narrative box.

WR: I mean, I love Judy Garland! I worship at her altar in so many ways. But really when it comes to me getting on stage and performing that material, that’s when I call to the songwriters and the lyricists and musicians and really make it about that. If you try to unsettle her spirit and bring it into the room, it’s a double-edged sword. If you are going to try and do battle with her, you’re going to lose, so I make it about the music.

MJ: I wonder what the dynamic was, and still is, between you and your intensely musical family.

RW: I’m very blessed, mainly because even though my family is mostly in show business, it’s really centered around music. My parents were very successful in many ways, but they weren’t necessarily top of the charts. We were never wealthy because of music. We always had to work and we always had to struggle a little bit, and I think at the end of the day that’s been very good for me, because I have a sense of it being very ephemeral. I don’t have a sense of entitlement in terms of being some kind of spoiled brat. Musically I’m able to keep going, because it’s not about money and it’s not about success. It’s a challenge.

Hours into a post-Brexit universe, it’s impossible to know the full scale of repercussions from Britain’s referendum vote to leave the European Union.  Some of the “leave” voters have already said they regret their choice, while global markets are panicking. Maybe younger adults should be panicking even more.

Britons voted to exit 52–48 percent, but according to a YouGov poll conducted just before the vote, a majority of voters under age 50 preferred to remain in the EU. Voters who grew up in a globalized world had the least interest in withdrawing from it.

Yet younger voters were outmatched by their elders, who usually turn out in higher numbers. In the U.K. general election in 2015, the youngest Britons, 18 to 24, were half as likely to vote as the oldest age group.

The Brexit vote leaves a younger generation to grapple with the future an older generation picked for them — and if you believe many environmentalists and climate leaders, that future could be a lot dimmer. Outgoing U.N. climate chief Christiana Figueres, among others, warned that Brexit would not be good news in the long run for climate action and the new global Paris agreement. And the potential leaders of a post-EU Britain might not take climate change seriously given that many of the conservatives who most actively campaigned for Brexit tend to deny science and have a loose relationship with facts.

Just as there’s a generational divide on Brexit, there’s one on climate change, too. Younger people would like the world to act to cut emissions, while older voters are generally less supportive of action, if they even believe climate change is occurring at all. (Unfortunately, I couldn’t find recent data breaking down U.K. climate views by age, but that’s the trend for the United States).

The Brexit vote will change the shape of European and global politics for years to come. It’s kind of like how the path we choose today on climate change — business-as-usual or steep emissions cuts — will bake in what kind of world we live in for centuries.

Plenty of British millennials certainly feel the weight of the decision, pointing out on Twitter that they’ve been “screwed.”
