Portable Healthy Meals for Work and School

Any meal can be portable if you’re creative. However, some dishes are better suited to on-the-go living than others!

Whether you’re in school, take a mealto work with you every day or are a full-on nomad, these portable healthy meals will help you step up your brown bag lunch game.

Make a Salad

Quinoa Radish Arugula Salad

Salad is the colorful, waving banner of the fit and fabulous for a reason! It’s often the first food people turn to when they want to get healthier, and itcan be a wonderful foundation for a meal packed full with nutrients and high-quality protein.

To make the perfect salad, start with a pile of dark, leafy greens like baby kale or spinach, then add toppings in these categories:

1) Healthy Proteins: Kidney beans, black beans, almonds and chia seeds are healthy meat-free protein solutions.

2) Good Fats: Avocado and olives are two examples of good fats that will sustain you long into the afternoon.

Pair with a complex, whole-grain carbohydrate for a side and you’ll have a portable, healthy meal in a jiffy!

Load Up a Sweet Potato

As a gal who has recently learned the value in eating a whole foods, plant-based diet, I have become a massive fan of a good sweet potato.

To bake the perfect potato for lunch, place the tuber directly onto your upper oven rack with a baking sheet on the rack below,thenpreheat the oven to 425 degrees Fahrenheit. Set your timer for 45 minutes to an hour. When the timer goes off, turn off the oven but leave your sweet potato where it is for another 30 minutes or so.

Take it out and enjoy with some of these topping ideas!

1) Black Beans & Kale

2) Sweet Corn, Baby Tomatoes, & Green Goddess Dressing

3) Bacon, Sour Cream, & Chives (Non-Vegan)

4) Avocado Slices, Chives & Sprouts

Pile on the Oats

“Overnight Oats”has become a go-to healthful breakfast in our home. Once or twice a week, I cook a mixture of rolled oats, quinoa, and steel cut oats in coconut milk for a treat that is as delicious as it is filling.

Facebook Makes It Easy for Advertisers to Be Racist

Imagine if, during the Jim Crow era, a newspaper offered advertisers the option of placing ads only in copies that went to white readers.

That’s basically what Facebook is doing nowadays.

The ubiquitous social network not only allows advertisers to target users by their interests or background, it also gives advertisers the ability to exclude specific groups it calls “Ethnic Affinities.” Ads that exclude people based on race, gender and other sensitive factors are prohibited by federal law in housing and employment.

The ad we purchased was targeted to Facebook members who were house hunting and excluded anyone with an “affinity” for African-American, Asian-American or Hispanic people. (Here’s the ad itself.)

When we showed Facebook’s racial exclusion options to a prominent civil rights lawyer John Relman, he gasped and said, “This is horrifying. This is massively illegal. This is about as blatant a violation of the federal Fair Housing Act as one can find.”

The Fair Housing Act of 1968 makes it illegal “to make, print, or publish, or cause to be made, printed, or published any notice, statement, or advertisement, with respect to the sale or rental of a dwelling that indicates any preference, limitation, or discrimination based on race, color, religion, sex, handicap, familial status, or national origin.” Violators can face tens of thousands of dollars in fines.

The Civil Rights Act of 1964 also prohibits the “printing or publication of notices or advertisements indicating prohibited preference, limitation, specification or discrimination” in employment recruitment.

Facebook’s business model is based on allowing advertisers to target specific groups 2014 or, apparently to exclude specific groups 2014 using huge reams of personal data the company has collected about its users. Facebook’s microtargeting is particularly helpful for advertisers looking to reach niche audiences, such as swing-state voters concerned about climate change. ProPublica recently offered a tool allowing users to see how Facebook is categorizing them. We found nearly 50,000 unique categories in which Facebook places its users.

Facebook says its policies prohibit advertisers from using the targeting options for discrimination, harassment, disparagement or predatory advertising practices.

“We take a strong stand against advertisers misusing our platform: Our policies prohibit using our targeting options to discriminate, and they require compliance with the law,” said Steve Satterfield, privacy and public policy manager at Facebook. “We take prompt enforcement action when we determine that ads violate our policies.”

Satterfield said it’s important for advertisers to have the ability to both include and exclude groups as they test how their marketing performs. For instance, he said, an advertiser “might run one campaign in English that excludes the Hispanic affinity group to see how well the campaign performs against running that ad campaign in Spanish. This is a common practice in the industry.”

He said Facebook began offering the “Ethnic Affinity” categories within the past two years as part of a “multicultural advertising” effort.

Satterfield added that the “Ethnic Affinity” is not the same as race 2014 which Facebook does not ask its members about. Facebook assigns members an “Ethnic Affinity” based on pages and posts they have liked or engaged with on Facebook.

When we asked why “Ethnic Affinity” was included in the “Demographics” category of its ad-targeting tool if it’s not a representation of demographics, Facebook responded that it plans to move “Ethnic Affinity” to another section.

Facebook declined to answer questions about why our housing ad excluding minority groups was approved 15 minutes after we placed the order.

By comparison, consider the advertising controls that the New York Times has put in place to prevent discriminatory housing ads. After the newspaper was successfully sued under the Fair Housing Act in 1989, it agreed to review ads for potentially discriminatory content before accepting them for publication.

Steph Jespersen, the Times’ director of advertising acceptability, said that the company’s staff runs automated programs to make sure that ads that contain discriminatory phrases such as “whites only” and “no kids” are rejected.

The Times’ automated program also highlights ads that contain potentially discriminatory code words such as “near churches” or “close to a country club.” Humans then review those ads before they can be approved.

Jespersen said the Times also rejects housing ads that contain photographs of too many white people. The people in the ads must represent the diversity of the population of New York, and if they don’t, he says he will call up the advertiser and ask them to submit an ad with a more diverse lineup of models.

But, Jespersen said, these days most advertisers know not to submit discriminatory ads: “I haven’t seen an ad with 2018whites only’ for a long time.”

9 Easy Garden Plants for Hardworking People

It’s a common dilemma you love the looks of a flourishing garden, but don’t have a lot of time or energy to put into keeping it up. You’re too busy with the demands of job, caretaking, and just plain living. The good news is that gardening can be a lot simpler than you think. It’s mainly a question of choosing the right type of plants. Here are 9 shrubs, flowers, and vegetables that will require minimal care.

Shrubs

Busy peopletend to be impatient people, so you may wonder why we mention shrubs. Truth be told, you can find some very fast-growing varieties. Buy small potted shrubs from your local nursery or online to transplant at home. Then the bulk of your work is already done. These plants need little watering once they’re established in their new location, and they deliver so much! In addition to good looks, they double as a green privacy fence. A hedge will also shelter your house from the elements, reducing your need for heating and cooling.

Vines

Vines are another choice which will provide you with both privacyandbeauty. Species such as ivy or clematis grow rapidly and need very little upkeep. They do need something to climb on, but that can actually be one of their virtues, especially if you’re looking to disguise an unattractive chain link fence or brick wall.

Succulents

Succulents are beloved of busy indoor gardeners, due to their appealing appearance, low maintenance, and limited need for water. Now try them outside as well. If you live inHardiness Zone8 or warmer, you can overwinter succulents in your garden. Otherwise, plant them in containers which you can easily bring into the house before the first frost comes along.

Bulbs

Plant bulbs in the fall and fugeddabout ‘em. Then get ready to enjoy the sweet surprise of blooms early next spring. Daffodils, tulips, iris, or my personal fave, delightfully scented hyacinth (pictured above), are generous plants which take very little care, yet put on a great colorful show. One note: Bulbs used to be replantable but newer varieties should be treated as annuals. Even if they do sprout for another year, they are likely to produce frail and scraggly results.

Perennials(Day Lilies)

If you’re looking for a hardy perennial, the day lily is for you. Unlike true lilies, day lilies grow from roots rather than bulbs. Available in a wide range of charming colors as well as the traditional orange — they thrive almost anywhere in the US (Zones 3-11). Wet soil, dry soil, even the salty soil in your beach house garden not much fazes the vibrant day lily. Another plus: Many varieties are a favorite perch forhummingbirdsand butterflies.

Annuals (Marigolds)

Growing marigolds is child’s play literally. These bright and cheerful quick-growing annuals are a perfect choice for your kids’ early experiments in gardening. Marigolds offer bright yellow, copper, and russet blossoms, and can reach a height of anywhere from 6 inches to an impressive 5 feet tall in a single season.

Herbs

Whether you have substantial yard space or 2 or 3 little pots perched on your balcony rail, herbs are simple to grow, yet very rewarding. Snip a few leaves to add zest to that super speedy 15-minute dinner recipe. You’ll save time (and money) on shopping for seasonings, and your homegrown herbs are guaranteedorganic.

Garlic

Garlic is a snap to grow. You don’t even need to shop for seeds. Just break off a few healthy, good-sized cloves and pop them in the ground. Cut the scapes (garlic shoots) in the spring to steam as a delicately flavored vegetable, and leave the garlic bulbs to pick in July and August.

Zucchini

Zucchini has a well-deserved rep as the easiest vegetable ever. In fact, your main problem will be figuring out what to do with your bumper harvest. Maybe send out invites for a zucchini-picking block party?

11 Foods We Would Lose Without Pollinators

We all know honey comes from bees. Have you ever connected other foodsyou eat with the fact that they only exist because they’re pollinated by bees and other creatures?

It’s an important connection to make, considering just how threatened bees, butterflies, birds, beetles and otherimportant pollinators are. The threats come from pollution, climate change, habitat destruction and use of toxic pesticides and herbicides. But maybe the biggest threat is ignorance of how essential these creatures are to the web of life as well as our own food chain.

The Whites House has acknowledged the importance of pollinators not only to America’s food securitybut to the U.S. economy. “Honeybees enable the production of at least 90 commercially grown crops in North America,” says the White House. Globally, 87 of 115 leading food crops depend on animal pollinators and contribute 35 percent of global food production. What that means is, pollinators contribute more than $24 billion to the U.S. economy. Not only do pollinators help keep us fed; they also help sustain our prosperity.

Here’s just one example of the impact pollinators have on what we eat and how well we do. Almonds are almost exclusively pollinated by honey bees. California’s almond industry, just the almonds, require pollination help from about 1.4 million beehives (not 1.4 million individual bees, the thousands of bees that live in each hive). But as bee colonies are collapsing, they’re taking their toll on the almonds and other plants they pollinate. Beekeepers in the U.S. have collectively lost an estimated 10 million beehives at an approximate current value of $200 each, driving up food prices but, more importantly, potentially putting more than a third of our food system in danger.

National Pollinator Week was unanimously designated by the U.S. to raise awareness about the urgent need to raise awareness about declining populations of pollinators. The original event was held in June 2007. It has now grown into an international celebration managed by the Pollinator Partnership and supported by both the U.S. Department of Agriculture and the U.S. Department of the Interior. This year, it will be celebrated June 20-June 27, 2016.

In honor of the 2016 Pollinator Week, here are 11 foods we would lose if pollinators weren’t around to do their job. Note that the list includes a wide variety of fruits and vegetables.

Apples (and all kinds of other tree fruits, including peaches, apricots, plums, lemons, limes and cherries)

Strawberries (as well as elderberries, blackberries, raspberries and cranberries)

Onions

Avocados

Green Beans (and many otherbeans, including adzuki, kidney and lima beans)

Coffee

Sunflower Oil (and other oils, including palm, safflower and sesame)

Tomatoes (plus cucumbers)

2015 Saw a Record Number of Attacks on US Mosques

The past three years have been difficult for Muslim-Americans, according to a new report tracking increasing Islamophobia issued by the Council on American-Islamic Relations and the UC-Berkeley Center for Race and Gender. Among the most eye-catching findings: the researchers recorded 78 attacks on mosques last year, the highest since CAIR began monitoring such incidents in 2009.

The report highlights the growth of many other forms of discrimination. Self-declared “Muslim-free” businesses have cropped up across the country, and bullying of Muslim students, even by teachers, is on the rise. One piece of good news is a decrease in law enforcement anti-terrorism trainings led by purported experts who spread fear and misinformation about Muslims.

The report suggests that anti-Muslim incidents spike in the wake of terrorist events, noting an uptick in violent anti-Muslim rhetoric that took place after Islamic State militants beheaded two Americans in Syria in August 2014. Additional armed anti-Islam demonstrations sprouted up in the wake of an attempted terror attack on a cartoon contest in Garland, Texas last year, where illustrators had been invited to submit caricatures of the Prophet Mohammed. And after November’s Paris attacks, there was a marked increase in attacks on American mosques.

The study comes after a Republican primary season that repeatedly featured anti-Muslim rhetoric. Presumptive Republican presidential nominee Donald Trump has repeatedly called for a “total and complete shutdown” of Muslim migration to the United States. Sen. Ted Cruz spoke at summits hosted by the Center for Security Policy, a group which has been declared an extremist anti-Muslim group by the Southern Poverty Law Center. Ben Carson told Meet the Press that he believed Islam was inconsistent with the Constitution and said he wouldn’t vote for a Muslim to be president. Two-thirds of Republican primary voters in New Hampshire favored banning Muslims from entering the United States, and last September, a survey of Republican voters in Iowa found that almost a third think Islam should be illegal.

Here are some key developments highlighted in the report:

Mosque Attacks

Last year saw a spike in attacks on Muslim places of worship.

Thirty-four mosques were targeted in just the final two months of 2015—more incidents than typically occur across an entire year. Only two of November’s attacks took place before the Paris terror attacks.

September 2015: Three young men burned three crosses on a New York’s mosque’s lawn.
November 2015: Vandals targeted a Texas mosque, covering the door in feces and throwing torn Korans on the ground.
December 2015: A severed pig’s head was left outside a Philadelphia mosque.
December 2015: A mosque in California was firebombed shortly before a prayer service.
December 2015: Raw bacon was wrapped around the door handles of a Las Vegas mosque.

Anti-Sharia movement

Since 2010, many state legislatures have seen bills introduced to prevent the influence of Sharia law on US courts, an effort which critics say has no purpose other than to vilify Muslims. As even a writer in the conservative National Review noted, “this ‘creeping Sharia’ phenomenon supposedly going on in American courts is not even happening.” Nonetheless, anti-Sharia and anti-foreign law bills have been popular among Republican state lawmakers.

Anti-foreign law bills have been enacted in ten states.
Over 80 similar bills and amendments were introduced between 2013-2015â&#128;¨. All but one were solely sponsored by Republicans.
To date, none of these laws have been invoked in legal proceedings.

The Islamophobia network

The report identified 33 groups whose “primary purpose” is to spread fear and hatred of Islam. Financial information collected by CAIR suggests that the following organizations had the highest average annual revenue between 2008 and 2013.

Textbooks

After a firestorm of complaints that school textbooks were too pro-Islam, Florida and Tennessee passed laws giving parents more power to reject certain course materials.

Muslim-free businesses

Since 2014, businesses in Arkansas, Florida, Kentucky, New York, Oklahoma, and New Hampshire have publicly declared themselves “Muslim-free.”

Media Bias

A 2014 study of national TV news published in the Journal of Communication found that “among those described as domestic terrorists in the news reports, 81 percent were identifiable as Muslims. Yet in FBI reports from those years, only 6 percent of domestic terror suspects were Muslim.”

New Data Proves Trump Is Completely Wrong About California’s Drought

California’s drought is far from over. Despite recent news that reservoirs are brimming in northern parts of the state, and a speech from Republican presidential candidate Donald Trump denying the drought, the snowpack level is low and temperatures are high.

A June 1 report from California’s Department of Water Resources shows that current snow water equivalents—the amount of water contained in the state’s snowpacks—are at just 23 percent of the normal amount. Average temperatures in the state are still at record highs. “Runoff forecasts are below average,” agency spokesman Doug Carlson said in an email. “Despite the rain in the north and the relatively full reservoirs, things are still not looking good for the drought.”

Of course, none of this is great news for the impending fire season: Moisture from El Niño caused new grasses to sprout—which, when combined with dry trees, become a recipe for wildfires. Forest Service Chief Tom Tidwell told SF Gate on Tuesday that the relief brought by precipitation was temporary. “What we saw this spring is that snowpack has come down faster than we’ve seen,” he said.

Just five days before the snow water data was released, Trump suggested that environmentalists were inventing the water problems plaguing the state. He told supporters that when he asked farmers whether there was a drought, they said: “No, we have plenty of water.”

At this point, we all know how bad meat is for the planet. A short list of the impacts of meat cultivation on land include deforestation, overgrazing, compaction, and soil erosion. One pound of beef requires about 1,800 gallons of water to produce. And our carnivorous tendencies produce, according to some estimates, as much as 50 percent of global greenhouse gas emissions — more than cars, planes, trains and ships combined.

But it’s delicious, which is probably why 84 percent of vegetarians eventually go back to eating it (including this writer and at least 20 percent of the Grist staff). A person can only convince themselves that veggie burgers don’t taste like compacted sawdust for so long — until, possibly, now. A Los Angeles-area startup claims to have produced a veggie burger that can meet all your red-blooded desires.

Beyond Meat creates meat products sans meat, and their latest venture, the Beyond Burger, promises to look, taste, and feel just like the real thing. And apparently there’s an eager market for it: The Beyond Burger launched in the meat aisle — right alongside beef, poultry, pork, and lamb — at a Whole Foods in Boulder, Colo., Monday, and sold out within an hour, according to the company.

Unlike most veggie burgers, which are commonly blends of black beans and soy mash, the Beyond Burger is made of 20 grams of pea protein. The reviews, so far, are positive: A Whole Foods exec said it “tasted, felt and chewed like any other burger.” (Although, given that Whole Foods is selling it, maybe take that with a grain of organic, free-range salt.) It also looks like one — the burger “bleeds” beet juice when you bite into it.

Plant-based alternatives to animal products make up a burgeoning trend: The New York Times reports that foods made from plant protein grew almost 9 percent from 2014 to 2015 — nearly three times the growth of overall food sales.

Unfortunately for vegetarians — or anyone — hankering for a convincing slab of pea protein to throw on the grill this summer, you’re going to have to wait: The Beyond Burger is currently only available in the Boulder Whole Foods (know your audience, as they say), but the company hopes to expand to other markets next year.

Under the Dome

China has an air pollution problem. In Under the Dome, that problem is laid out with pressing slideshow wizardry. Remind you of another environmental movie? Deborah Seligsohn, former principal adviser to the World Resources Institute’s China energy and climate program, points to the documentary as An Inconvenient Truth’s most immediate descendent. “In four days, it had 250 million views on the web. That’s the influence,” she told Grist. Watch: YouTube (below!).

Catching the Sun

Catching the Sun confronts the big questions imposed by a burgeoning global solar industry. Is a 100-percent solar-powered world achievable? And if so, who stands to benefit? Director Shalini Kantayya has called mainstream environmentalism “a thing for the privileged.” As she told Grist, “If you have extra money, you can put solar panels on your home or pay for organic food.”

The documentary is Kantayya’s take on where environmentalism should be heading. Spoiler alert: It’s a story of hope, not doom. Watch: Netflix.

Here’s one way GMOs aren’t beating evolution

There’s a smart piece in Nature about the limitations of genetic engineering in creating more efficient crops. It’s the story of old methods trumping the new. Whether it’s radio, vinyl records, or books, we see over and over again that older technologies fill a vital role in the modern world. Likewise, plant breeders working with traditional techniques “are overtaking agricultural-biotechnology companies that have invested years of work in tests with GM crops,” writes Natasha Gilbert.

Gilbert is focused on the breeding of nutrient-efficient crops — plants that can thrive with less fertilizer. In this competition, genetic engineers are squaring off against evolution and losing. There’s already an evolutionary incentive for plants to be efficient. If one plant survives in poor soil where others cannot, that plant will be more successful at spreading its DNA. So, for millions of years, evolution has already been working on the same task. Often the solutions are already out there. It’s just a matter of finding the right traits in the wild or in the plant’s genome.

Certain kinds of genetic engineering, especially small-scale gene editing, can still be useful in breeding nutrient-efficient crops. But GMOs are much more likely to be useful in areas where evolution hasn’t already been able to tackle the problem, like moving disease resistance between banana varieties that no longer reproduce sexually and therefore can’t exchange genes.

Coal exec admits Donald Trump doesn’t understand the first thing about coal

The way Donald Trump talks about the coal industry, Appalachian miners will be getting back to work on day one of his administration. “The miners of West Virginia and Pennsylvania, which was so great to me last week, Ohio and all over are going to start to work again, believe me,” the presumptive Republican nominee said earlier this month. Everything will be great.

What is unclear is how Trump intends to make coal mining great again, since he doesn’t appear to understand the first thing about the industry he intends to save — neither the broad-brush economics, nor what is within the president’s power to do. Even a coal industry executive, Bob Murray, CEO of Murray Energy and vocal Obama critic, has to admit Trump doesn’t know what he’s talking about.

In an interview with Taylor Kuykendall, a reporter for the trade publication SNL Energy, Murray revealed just how little Trump really gets about coal.

Trump, for instance, reportedly asked Murray, “What’s LNG?” (it stands for liquified natural gas, which the candidate might want to read up on as the glut of cheap natural gas is a large factor in coal’s demise.)

Murray also told Kuykendall that Trump is over-promising and should stop setting unrealistic expectations for coal’s big comeback:

“I don’t think it will be a thriving industry ever again,” Murray said. “We’ll hold our own. It will be an extremely competitive industry and it will be half size. … The coal mines can not come back to where they were or anywhere near it.”

Implicit in Murray’s comments is the fact that there is a lot outside a president’s control when it comes to coal. These include: sinking prices for natural gas and renewable energy that have made coal far less competitive; other markets’, like China’s, demand for coal; and coal production moving from Appalachia to Wyoming, now the top U.S. coal producer, where it’s cheaper to mine.

In other words, Trump can do his worst — like scrap the Environmental Protection Agency — and it won’t bring about an economic revolution for these states. Murray all but admits that when he says he’s skeptical of Trump’s abilities to reverse all these trends.

Trump’s delusions, however, won’t stop the industry from embracing him. Calling Trump “the horse to ride” in a speech yesterday, Murray was ready to give Trump a pass on the policy. As he told Kuykendall, “he’s just focused on getting elected so he has to kind of gloss over all of the issues.”

Trump will be presumably be enlightening us on his energy policy on Thursday, in a speech in North Dakota, home of the domestic oil and gas boom that has helped kill coal.
