Listeria in frozen foods. E. coli at Chipotle. Salmonella-laced pistachios. Practically every week there’s a new tainted food to avoid—and as a result, foodborne illness sickens 1 in 6 Americans, hospitalizes 128,000, and kills 3,000. The problem of bugs in food has stumped government agencies including the Centers for Disease Control and Prevention, the Food and Drug Administration, and the United States Department of Agriculture.

But there’s one guy who has arguably won more battles against foodborne illness than anyone. This week’s Bite podcast guest is Bill Marler, a Seattle-based attorney who represents victims of food poisoning.

In a landmark 1993 case, Marler sued Jack in the Box over its infamous E. Coli outbreak—and won. Since then, he’s gone up against dozens of food industry giants: McDonald’s, KFC, Cargill, Taco Bell, Odwalla, and most recently, Chipotle, to name but a few. In addition to his work as a lawyer, Marler also fights for our government to tighten the rules that food suppliers have to follow. He runs the website Food Safety News, and he blogs at marlerblog.com.

We talked to Marler about why he insists on washing his own lettuce, how Chipotle became a victim of its own success, and tips on avoiding contaminated chow.

BPA’s Lasting Effects on Kids May Start in the Womb

The US childhood obesity rate remains high and is probably still inching upward. A new study points to a possible contributing factor that’s often neglected: prenatal exposure to bisphenol A (BPA), a chemical widely used in plastic water bottles, metal food cans, and receipt paper.

A team of researchers from Columbia University, Johns Hopkins, and the Centers for Disease Control and Prevention tracked 369 mother-child pairs from the third trimester of pregnancy until the kids turned 7. They measured BPA levels in the moms’ urine during pregnancy, and then checked the kids’ height, weight, waist circumference, and body fat as they aged, also measuring their BPA levels. They adjusted the results for factors that could potentially skew the results, including race and pre-pregnancy obesity among the moms.

They found that 94 percent of the pregnant women in the study had measurable levels of BPA in their bodies. The kicker: The higher the mothers’ BPA exposure was during pregnancy, the more signs of obesity girls showed at age 7, as measured by body fat and waist circumference compared to height. There was no such association for boys; nor was there any relation between BPA levels in the kids’ urine and obesity as they grew.

The fetal period is when we’re most vulnerable to BPA and its ability to alter metabolism and the way our bodies generate fat cells, the results suggest. As for the finding that BPA seems to affect girls differently than boys: That’s not surprising, said the study’s lead author, Lori Hoepner of Columbia University’s Joseph L. Mailman School of Public Health. BPA is an endocrine-disrupting chemical, meaning it mimics or blocks hormones produced by the body. Boys and girls produce different hormones, so hormone-disrupting chemicals might be expected to affect them differently.

Hoepner added that other studies have linked prenatal BPA exposure to higher body fat in children up to age 4. The current study is the first one to find an association at age 7. Hoepner and her team plan to follow the same mother-child pairs to see if the effect persists into puberty.

While the current study found evidence for an obesity effect from prenatal exposure, others—like this one—have also found an obesity association in older girls from childhood exposure. Previous studies have also linked to BPA to neuro-developmental disorders and asthma in kids.

A Columbia University press release accompanying the study delivered this advice for avoiding BPA: “To reduce exposure to BPA, the National Institute of Environmental Health Sciences recommends avoiding plastic containers numbers 3 and 7, shifting from canned foods to fresh or frozen foods, and, when possible, choosing glass, porcelain, or stainless steel containers, especially for hot food and liquids.”

The US Food and Drug Administration has banned BPA from baby bottles and sippy cups, but that won’t protect pregnant women from exposing their fetuses to it via, say, eating canned food or handling receipts. For its part, the chemical industry insists BPA is safe. According to the US Department of Agriculture, two companies—Dow and Bayer—”produce the bulk of BPA in the world.”

20 Percent of Plant Species Could Go Extinct

Climate change, deforestation, and pollution are wreaking havoc on the Earth’s vegetation. djgis/Shutterstock One out of every five plant species on Earth is now threatened with extinction. That’s the disturbing conclusion of a major report released this week by scientists at Britain’s Royal Botanic Gardens Kew. The planet’s vegetation—from grasslands to deserts to tropical rainforests—is being hit hard by human activity. And deforestation, pollution, agriculture, and climate change are all playing a role. The sliver of good news, though, is that some researchers are hopeful that people will be able to act in time to avert the worst of the impending crisis. “I am reasonably optimistic,” said Kathy Willis, Kew’s science director, in an interview with our partners at the Guardian. “Once you know [about a problem], you can do something about it. The biggest problem is not knowing.” But others take a darker view. “Regardless of what humans do to the climate, there will still be a rock orbiting the sun,” said University of Hawaii scientist Hope Jahren in a recent interview with Indre Viskotas on the Inquiring Minds podcast. Jahren is a geobiologist—she studies how the earth (“geo”) and life (“bio”) come together to shape our world. “I’m interested in how the parts of the planet that aren’t alive—rocks and rivers and rain and clouds—turn into the…parts of the world that are alive: leaves and moss and the things that eat those things,” she explains. And what she’s seeing isn’t good. “We are already seeing extinctions,” she says. “We’re already seeing the balance of who can thrive and who can’t thrive in…the plant world radically shifted. In a lot of ways, I think that train has passed.” You can listen to her full interview below: Jahren, who is the author of a new book called Lab Girl, was recently included onTime magazine’s list of the 100 most influential people. She’s also an outspoken voice for gender equality and the fight against sexual harassment and assault in the scientific community. Part of Jahren’s work has focused on reconstructing the climate of the Eocene, the geologic epoch that lasted from about 56 million years ago to about 34 million years ago. In the middle of that period, about 45 million years ago, the world was so warm that massive deciduous forests were growing above the Arctic Circle—despite the fact that, as Jahren points out, the region saw little-to-no sunshine for part of the year. Jahren and her colleagues study fossilized plant tissues left over from these ancient forests in order to understand how the climatic factors of the time—light levels, atmospheric composition, water, etc.—combined to “make possible this life in the darkness.” She compares her work to investigating a crime scene. “Almost anything you come upon could have information in it,” she says. Jahren’s description of a lush Arctic full of plants and animals is striking. Imagining that world, she says, is “a really neat thing to do when you’re…juxtaposing that image against that fact that you’re near the North Pole, and there’s not a soul in sight for thousands of miles, and there’s not a green thing in sight for hundreds of miles.” That may be one of the reasons why she speaks so passionately about environmental destruction in the present day. “The world breaks a little bit every time we cut down a tree,” she says. “It’s so much easier to cut one down than to grow one. And so it’s worth interrogating every time we do it.” In the end, though, Jahren isn’t sure that science will lead humanity to make better decisions about the planet. How to Start Your Own Community-Supported Agriculture (CSA) Business

You share bumper crops of tomatoes and peppers with the neighbors, turn berries into jam, and bake countless loaves of zucchini bread to keep fresh produce from going to waste. Whether youre an experienced gardener eager to share the harvest or a homesteader looking to make a profit from your backyard bounty, starting a CSA might be the answer.

CSA stands for community-supported agriculture. Farmers use this model to sell shares of their harvest to supporters. In exchange for a flat fee paid upfront, subscribers receive weekly (or bi-weekly) boxes of produce throughout the season that can be picked up at predetermined locations at set times.

Growers benefit from having guaranteed income and capital to purchase seeds and other supplies, and subscribers get access to a diverse array of fresh fruits and vegetables for an entire growing season.

While the CSA model is popular, you should know a few things before signing up subscribers.

Preparing for Success

Starting a CSA is not an undertaking for beginning gardeners. Subscribers purchase shares with the expectation of receiving fresh produce all season long, which means you need the experience to deliver.

A CSA is a business, and its important to consider the following issues.

Check local zoning laws:On a farm, it might not be a problem to have subscribers stopping by to pick up their shares. If your garden or homestead is in a residential neighborhood (or subject to HOA rules), on-site distribution might be prohibited. If this is the case, arrange for an alternate pickup location. A local farm-to-table restaurant may agree to allow subscribers to collect their shares there; delivering shares is another option. Youll also need to check with the city or county to determine whether you need a business license to sell fruits and vegetables.

Establish Agreements:Some CSA operators have written agreements for subscribers spelling out the price of the share, the length of the season, what is included with each share, and pickup times and locations.

Its also a good idea to outline some of the risks in a written agreement. Some crops may fail, and others may exceed expectations; subscribers need to understand that their shares could include a lot of kale and no tomatoes and that subscribing to a CSA means taking on a share of the risk. A University of Illinois professor of agricultural law developed a model CSA agreement that is available as a free download.

Put Safety First:Make sure you understand and follow state and federal guidelines for safe food handling and storage.

Cover Your Assets:Research insurance options. You want to be covered if a subscriber gets sick from something in their CSA share or gets injured while picking up their produce from the garden.

Planning the Harvest

The success of a CSA depends on good planning. Subscribers will expect to receive equal amounts of produce throughout the season, not a few heads of lettuce in the spring, dozens of vegetable varieties in the summer, and a handful of turnips in the fall.

CSAs often operate for 20 weeks; most also offer 10-week (or half-season) shares. Plan to have multiple crops available throughout the season.

As a general rule, each share should contain 10 to 20 pounds of fruits and vegetables. To provide a diverse array of produce, aim to harvest between five and 12 different types of produce each week. Use these numbers to plan the number of available shares your garden can accommodate.

Consider planting multiple varieties of the same type of vegetable. Some tomato varieties make great slicers, others are perfect for sauces and canning, and some, such as purple, black, or striped varieties, are just offbeat enough to wow subscribers. Dont forget about herbs, which offer a nice complement to fresh produce.

To help with planning, consider using an online tool. The Old Farmers Almanac Smart Gardener and Mother Earth News both offer online planners that show sowing and harvesting times based on hardiness zones to help ensure an impressive array of crops in each weeks share.

Setting the Price

The cost per share should be fair for subscribers, and it should provide enough capital to cover your costs.

The most basic method of establishing the cost per share is estimating the market price of the produce included in an average share and multiplying it by the number of weeks in a share. In other words, if a subscriber would spend $20 at the farmers market to purchase an equivalent amount of produce included in one weekly box, set the price at $200 for a half share (10 weeks) and $400 for a full share (20 weeks).

Do some quick calculations to ensure that the cost per share is enough to cover the cost of soil, seeds, and other supplies while providing a fair income for the work that goes into growing vegetables as well as marketing and managing the CSA.

Recruiting Subscribers

Once the number of available shares is calculated, its time to sign up subscribers.

Spread the word about the CSA to friends, neighbors, and co-workers; post on social media; and create flyers that include the share price, length of the season, and what types of produce will be available. Dont forget to include information about how people can sign up!

As the CSA grows, consider starting a newsletter that includes updates on the crops, photos, recipes, and information about washing, storing, and preserving produce in weekly boxes.

Maintaining Momentum

Operating a CSA is a lot of work. The good news is that you dont have to operate solo.

Some farms offer a discount on shares in exchange for volunteer labor. While an extra set of hands might sound appealing, subscribers might not be well versed in growing vegetables, and they could need a lot of direction and training to be of value; keep this in mind before inviting subscribers to work for food. A better bet is partnering with another homesteader or experienced backyard gardener to trade responsibilities and share revenues.

Co-operating a CSA can also mean expanding the types of products included in the share. If a neighbor raises chickens or bees, you could supplement the fresh produce youre growing with eggs or honey from their homestead.

At the end of the season, ask subscribers to fill out a survey about their experience. The information you gather can help you plan crops, tweak pick-up times or locations, and adjust pricing or share sizes before the next season.

Now Even Tofurky Has a Lobbyist

When the giant companies that dominate US meat, dairy, and egg production want something in Washington, they lean on armies of lobbyists, which are financed by flush trade groups like the North American Meat Institute, the National Pork Producers Coalition, the National Chicken Council, and the National Cattlemen’s Beef Association. But who speaks up for seitan chops on the Hill?

Until recently, essentially no one, says longtime food industry critic and researcher Michele Simon. And so she has launched the Plant Based Foods Association, which exists to “ensure a fair and competitive marketplace for businesses selling plant-based foods intended to replace animal products such as meats, dairy, and eggs.” The brand-new trade group already has a part-time lobbyist, the longtime vegan and organic-food advocate Elizabeth Kucinich, wife of former US Rep. Dennis Kucinich (D-Ohio).

Simon, a committed vegan, told me two factors inspired her to organize the group: a recent spate of alt-protein companies coming on the scene, and the struggle they face “just to name their products.”

California upstart Hampton Creek, for example, had to fend off challenges from processed-food giant Unilever (the maker of Hellmann’s mayonnaise), the American Egg Board, and the US Food and Drug Administration to call its eggless mayo product “Just Mayo,” she noted. She also cited the case of another California company, Miyoko’s Kitchen, which was ordered by the California Department of Food and Agriculture to market its products not as nut-based cheese, but rather as “cultured nut product.”

“Doesn’t exactly roll off the tongue,” Simon says. “It’s ridiculous.”

After years studying Big Meat trade groups and how they operate, she learned how effective they are, not just at shaping public policy to “promote more harmful foods,” she says, but also at communicating with consumers, serving as a go-to source for reporters, and nudging retailers on how to market their products. And so the Plant Based Foods Association aims to conduct those services and develop a “collective voice” for companies that offer animal-free meat, dairy, and egg alternatives.

Now, in our age, enormous food companies don’t respond to new threats to their market share just with lawsuits and appeals to federal overseers like the FDA, as Unilever did with Hampton Creek. They also respond by imitation and acquisition—they have the deep pockets needed to launch new products or just buy the companies that make them. Indeed, just last month, Unilever rolled out its own eggless mayo-like spread.

So what’s to stop big-food conglomerates like Unilever from taking over the Plant Based Food Association and using it to their ends? Right now, the PBFA’s membership list consists of companies that deal solely in vegetarian products, from nut-milk upstarts Califia and Malk to lesser-known firms like Tofuna Fysh. (Vegan tuna salad, anyone?) Simon said any purveyor of vegetable-based protein products, including Unilever, is welcome to join the trade group, but the bylaws state that a majority of its board of directors will represent pure-play vegetarian companies.

I’ve long been ambivalent about elaborately processed plant-based meat, dairy, and egg substitutes. I’ve puzzled over why people looking to eat less animal product just can’t just gravitate to deliciously cooked beans and grains, and even called for a falafel revolution as an alternative to soy and pea protein tweaked in a factory to taste a lot like chicken. Why do we need prepackaged vegan tuna salad?

Simon responded that she herself eats mainly whole vegan foods (she mentioned quinoa and kale), and that she’d “love it if everyone just adopted my way of eating.” Meanwhile, though, animal products loom large in most Americans’ diets, and the “environmental destruction from industrialized animal production” continues piling up, she said. (Here‘s the eminent ecologist Vaclav Smill on industrial meat’s footprint.) “We need every tool in the toolbox,” and conveniently packaged, high-protein vegan products play a crucial role in the effort to convince people to eat less meat, she said.

In other words: Quit being such a food snob, Philpott.

Here’s Why the NBA’s Top Team Stopped Letting Its Players Eat PB&J

After the Golden State Warriors’ Steph Curry scored 51 points during his game last night, he might have been craving a soft peanut butter and jelly sandwich. But the day before, the favorite snack would’ve been out of reach: As a part of overhauling the reigning NBA champions’ diet, the team recently asked players to cut back on sugar while traveling to games, reports the Wall Street Journal.

The champs aren’t alone in their quest to eliminate the sweet stuff. Americans are cutting back on sugar more than any other substance these days, according to a January Reuters poll. Fifty-eight percent of people polled said they had attempted to limit their sugar intake over the last 30 days, compared to 48 percent who had attempted to cut back on sodium and 50 percent who had tried to cut calories. Nearly half said that labels stating “no sugar added” helped inform their shopping decisions.

Though we may be foaming at the mouth for an Odwalla green juice (50 grams of sugar) or a Nature’s Valley granola bar (11 grams of sugar), the United States Department of Agriculture says we’re on the right track in trying to avoid too many sweets. New dietary guidelines released earlier this year recommend we drastically decrease our added-sugar intake—particularly of sweet drinks and processed snack foods. Sugar-laden diets translate to increased calorie consumption and a higher risk for heart disease, obesity, and diabetes. The feds recommend a daily maximum dose of 12 teaspoons—less than half our current average of 30. (Here’s what that recommendation might look like).

So just how much sugar is in one of the Warriors’ favorite sandwiches? Let’s assume you use the same ingredients reportedly stocked in the locker room in Oakland: creamy Skippy peanut butter, Smucker’s strawberry jam, and 12-grain whole wheat bread.

A whole sandwich, with just one serving of the peanut butter and one serving of the jam, amounts to about 21 grams of sugar—a little more than 5 teaspoons, and still well within the USDA’s daily recommended dose of added sugar.

For the Warriors players, who were reportedly on board with giving up Gatorade and sodas, the absence of those homemade PB&Js just couldn’t be justified. With help from their assistant coach, the players successfully persuaded their management to lift the ban on the beloved sandwich this week. Of course, basketball stars burn on average of anywhere from 600-800 calories in a game—surely they can afford to celebrate with a sandwich on the long flight home.

Cows are gassy beasts. And this gas is bad for the planet. Last year, my colleague Josh Harkinson detailed just how dangerous this gas has become in our atmosphere:

Cows are already the nation’s single largest source of methane, a greenhouse gas produced by oil extraction, decomposing trash, and the guts of grazing animals that’s as much as 105 times more potent than carbon dioxide. A single cow farts and belches enough methane to match the carbon equivalent of the average car. According to a 2006 United Nations Food and Agriculture Organization report, the world’s 1.4 billion cows produce 18 percent of the world’s greenhouse gases—more than the entire transportation sector.

Our hunger for beef is a big problem for the climate: More cows, more methane, faster warming. Now we have a sensational new visual way to understand exactly how much methane we’re talking about, thanks to a new documentary called Racing Extinction, which airs on Discovery Channel Wednesday night in 220 countries and territories around the world—a date designed to coincide with the early days of the high-stakes UN climate summit, where diplomats are attempting to forge a new global deal to limit greenhouse gas emissions.

To measure just how much a single cow emits every day, scientists at the National Institute of Agricultural Technology hooked up inflatable plastic bags to cows’ stomachs. Then they fed them. And then, they watched the methane bags inflate. Check out the time-lapse:

There’s a Horrifying Pork Factory Video Going Around. The Story Behind It Is Even Worse.

Earlier today, animal rights organization Compassion Over Killing released a new undercover video shot at the Quality Pork Processors (QPP) plant in Austin, Minnesota. That cut-and-kill operation is part of the Hormel Foods Corporation’s flagship complex that I first wrote about for Mother Jones in 2011.

QPP processes between 19,000 and 22,000 hogs per day depending on demand, making it one of the most productive facilities in the country. But the video also suggests that the volume and speed of processing results in shocking mistreatment of animals. Downed hogs are shown being kicked and dragged toward the slaughter area. Some conscious hogs are shown shackled to the conveyor chain, while others, still alive, have their throats slit and are sent to the scalding tank. The video also documents hogs with pus-filled abscesses and what appears to be fecal contamination being processed for food—as well as an employee who seems to be nodding off at his workstation.

US Department of Agriculture (USDA) spokesperson Adam Tarr told the Washington Post, “The actions depicted in the video under review are appalling and completely unacceptable, and if we can verify the video’s authenticity, we will aggressively investigate the case and take appropriate action,” but Tarr did not note that this plant has been held up by the USDA as the model for a pork inspection nationwide.

In response to an email query from Mother Jones about the video, a Hormel spokesperson wrote:

QPP as sic a third-party supplier to our company.

Hormel Foods is committed to animal care and has high standards and policies with our suppliers. We have a zero tolerance policy for the inhumane treatment of animals, and we remain dedicated to the highest standards for animal care and handling.

Routine audits are conducted at all facilities, and we hire third-party auditors to ensure the highest animal care procedures are followed.

Our suppliers operate under very visible conditions, including third-party video monitoring and the USDA is present during all operations. We will review the video and will take action if warranted.

Meanwhile, the Associated Press reported that QPP disciplined two of the employees associated with the video; Minnesota’s ABC 6 News reported that one of those two was the filmer.

The QPP/Hormel Foods plant in Austin is one of just five pork processing plants in the country where the USDA was running a pilot program to test the effects of reducing the number of government meat inspectors. The idea sounds crazy on its face: Why would the USDA, the agency created to ensure food safety, propose cutting inspectors? As I reported earlier this year, the pilot program, known as the Hazard Analysis and Critical Control Points-based based Inspection Models Project (HIMP), was presented as a faster, more modern “risk-based, prevention-oriented” approach which could replace slower, manual inspection of all carcasses.

A strong supporter of the plan, back when it was implemented in the early 2000s, was Hormel’s then-CEO Joel W. Johnson. Advocates argued that if plants hired their own quality-assurance auditors to sort out diseased animals before they reached USDA inspection stations, that would reduce the chance of cross-contamination, and inspectors could focus on spots along the line where contamination was most likely to occur and perform random microbiological tests in those places. Five pork-processing facilities nationwide were selected for the program—and Johnson managed to get the head of the USDA’s Food Safety Inspection Service (FSIS), to include both of the slaughter operations that Hormel operated into that select handful. (And Hormel bought a third plant in the program soon after.)

As I reported in Bloomberg Businessweek, Pablo Ruiz, a former process-control auditor at QPP, told me that the production line in Austin was running so fast that the lone government inspector just sat in a chair watching carcasses rush by, because he only had time to do visual inspections. I wrote in Bloomberg Businessweek:

USDA inspectors are typically required to check the tail, head and tongue, thymus, and all viscera of each hog. They palpate the lymph nodes of the large intestines and lower abdomen to feel for tuberculosis nodules, feel the intestines themselves for parasites, and turn over every set of kidneys to check for hardness resulting from inflammation or hidden masses.

At QPP, Ruiz said, the inspectors just visually double-checked the work of process-control auditors. And even QPP’s auditors didn’t have time to inspect viscera.

“We just check at the head,” Ruiz says, adding that he doesn’t think there is enough government oversight and that the USDA should double-check the work of process-control auditors. But the lack of oversight, he says, is “why the line goes so fast. When I was there, it was 1,305 per hour. This means 10,000 hogs achieved every eight hours. That’s money in the bank—easy, quick.” (QPP did not respond to telephone requests for comment, as well as a more detailed e-mail. Two messages left on Quality Pork CEO Kelly Wadding’s voicemail also went unreturned.)

About that same time, Elsa Murano, who had left her post at the USDA as Undersecretary for Food Safety soon after HIMP was approved, was hired by Hormel Foods to serve on the board of directors. (Nearly ten years later, she still holds that position—at an annual salary of more than $200,000 with total stock holding valued at over $2 million.)

In January of this year, as Mother Jones‘ Tom Philpott reported, four inspectors from Hormel-controlled facilities filed affidavits attesting to violations of food safety standards with the whistleblower protection organization Government Accountability Project (GAP). Joe Ferguson, who retired last September as an on-line USDA inspector inside QPP, was the most pointed. In discussing HIMP, Ferguson said, “It is my personal opinion that there is no inspection of carcasses under this program.”

Like Ruiz, Ferguson attributed the decreased attention to food safety to the desire to increase line speeds. And, he said, at the same time, USDA was reclassifying food safety violations so that they no longer required work stoppages for cleaning. “We used to stop the line for bile contamination, chronic pleuritis, hair/toenails/scurf . . . Under HIMP,” he said, “we are no longer allowed to stop the line so they may be removed. Put ’em in the cooler and ultimately out to the consumer.” As for the reason that such changes were occurring, Ferguson didn’t mince words. “FSIS hierarchy is in bed with the regulated industry,” he said. He pointed to Murano’s move to Hormel as an example of the kind of sway that industry now held over the USDA. “The companies are now calling the shots,” Ferguson said. “Pretty soon the agency will have no authority.”

In a report issued in May 2013, the USDA’s Office of the Inspector General said that the kinds of problems allegedly occurring in those facilities should have resulted in a written warning or even a plant suspension, but few actions were taken. The report concluded that the Inspector General’s investigation “revealed a systemic failure and not a sporadic problem” and warned: “It is critical that plants work towards preventing violations from occurring in the first place because recurring, severe violations may jeopardize public health.” Stricter enforcement, the report concluded, is necessary to ensure that “the nation’s commercial supply of pork is safe and wholesome.” Instead one year ago, FSIS not only approved the continuation of the HIMP pilot project but called for the start of a review period to determine if the program “could be applied to additional establishments.” And in today’s Washington Post article, Phil Derfler, the deputy administrator at FSIS, is quoted defending HIMP. “It’s an improvement on the traditional system,” he is quoted as saying, even though the USDA is still supposed to be reviewing data to make that determination.

If, indeed, the USDA still intends to proceed with HIMP, the release of Compassion Over Killing’s video should dramatically complicate those plans. When the public sees that the project has resulted in the kinds of animal cruelty and food safety risks recorded there, they may think twice about consuming Hormel products. Joe Ferguson, the USDA inspector who certified meat from that plant for more than ten years, said, “Personally, I will not eat any products that bear the name of the company for which this meat is produced.”

But the conditions portrayed in this horrifying video cannot be brushed aside as an isolated series of events in a single pork plant or even a single company. The bigger issue is that the USDA’s Food Safety and Inspection Service is saying QPP is a model plant. After seeing this video, it’s hard to imagine that consumers will agree.
