California is shattering renewable records. So why are greenhouse emissions creeping up?

The green beacon that is the state of California is making clean-energy strides, according to new stats out this week. It’s harnessing a record amount of solar power, building more turbines to capture wind power records, and closing in on the moment when the grid goes 100 percent carbon free.

And yet it’s also starting to generate more greenhouse gases. WTF?

Every month California’s electricity managers put out a report showing what that climate-conscious state is up to. And this one brings sunny signs of progress, unheralded achievements, and fun factoids. Earlier this month, for instance, California set a new record for solar power generated.

And on April 28, at precisely 1:25 p.m., renewables provided 72.7 percent of California’s electricity needs. That’s also a record, but not an aberration. It’s consistent with a longstanding trend as California’s policies connect more solar panels and wind turbines to the grid. As you can see in the next graph, California keeps hitting new records — usually around noon — when renewables provide the majority of the electricity for a few hours.

Since 2015, renewables have helped California decrease the amount of greenhouse gases its power plants released into the atmosphere. But this past February, the state’s electricity was more carbon intensive than it was in 2017, and in March it was even worse:

What’s that all about? There’s a hint in the report. California had to dump about 95,000 megawatt hours of renewable power in April, because all that power would otherwise have flooded onto the grid when people didn’t need it — blowing fuses, igniting fires, and melting every computer without a surge protector. That’s a lot of energy, enough to provide all of Guatemala’s electricity for the month.

Transporting electricity and storing it is expensive, so the people managing the electrical system ask power companies to stop putting power on the grid, to curtail their production. It’s called “curtailment” in electric-system jargon. As the number of solar panels feeding the grid increases, so do curtailments.

The thing is, every new panel sending electricity to the grid is still displacing fossil fuel electricity. So that can’t explain why California is burning more fossil fuels than in the last couple of years.

What’s the real problem, then? It’s almost certainly the lack of water. When wind and sun stop generating electrons, we’d like to have other low-carbon source of electricity that we could turn to — what some energy wonks call a “flexible base” of power generation.

California’s big source of reliable low-carbon electricity has been hydropower. But the state is bracing for a drought after a warm, dry winter. So California is hoarding water behind dams, rather than letting the water run through turbines to generate electricity. As a result, hydropower generation is down. And the state’s nuclear, geothermal and biomass plants are already running at capacity. As a result California is replacing the missing waterpower with fossil-fuel generation, namely natural gas.

All this serves as a good reminder that renewables can’t provide us with all of our electricity needs alone. We’ve also got to create bigger and better batteries, string up international transmission lines and build more low-carbon power plants that we can ramp up and down to complement those renewables. If California gets that done, its power grid will be cleaner and more energizing than a $5 shot of wheatgrass juice sold from a food truck by a man with a well-conditioned beard.

More than 10,000 Interior employees say they were harassed or intimidated.

Forests in the American West are having a harder time recovering from wildfires because of (what else?) climate change, according to new research published in Ecology Letters.

Researchers measured the growth of seedlings in 1,500 wildfire-scorched areas in Colorado, Wyoming, Washington, Idaho, and Montana. Across the board, they found “significant decreases” in tree regeneration, a benchmark for forest resilience. In one-third of the sites, researchers found zero seedlings.

The warmest, driest forests were hit especially hard.

“Seedlings are more sensitive to warm, dry conditions than mature trees, so if the right conditions don’t exist within a few years following a wildfire, tree seedlings may not establish,” said Philip Higuera, a coauthor of the study.

Earlier this month, a separate study found that ponderosa pine and pinyon forests in the West are becoming less resilient due to droughts and warmer temperatures. Researchers told the New York Times that as trees disappear, some forests could shift to entirely different ecosystems, like grasslands or shrublands.

You’d think the rapid reconfiguration of entire ecosystems would really light a fire under us to deal with climate change, wouldn’t you?

Europe’s hurricane-fueled wildfires might become a recurring nightmare

This week, a hurricane broadsided Europe — a rare event considering most of the continent is closer to the North Pole than it is to the tropics. That would have been enough to make worldwide news, but the continent was due for much more.

As the storm, named Ophelia, approached, it was the strongest hurricane ever recorded in the eastern Atlantic. Although weather watchers were initially focused most closely on Ireland, where the storm made landfall, its deadliest impact occurred hundreds of miles south in Portugal and Spain.

There, strong winds stoked hundreds of wildfires, killing more than 40 people. The ghastly images from southwestern Europe looked less like real life than illustrations from a cautionary fairy tale about the end of the world. Being there, as one person wrote, was like “a nightmare world of smoke and ash.”

These fires would have been the deadliest in Portugal’s history, were it not for massive blazes in June that killed more than 60 people, trapping many in their cars, as flames advanced too quickly for them to escape.

With its vast forests and typically warm and dry summers, Portugal is already Europe’s wildfire capital. And in recent decades, its profound and unique socioeconomic vulnerability to fire has only grown. Last year, half of the fire acreage burned in all of Europe lay in Portugal — a trend attributed both to haphazard forestry practices and climate change bringing hotter and drier weather.

This year, the sheer scale of the fires has been staggering. On Sunday alone, wildfires burned at least 300,000 acres — more than is normally burned in an entire year. Smoke from the fires quickly spread as far away as London.

Portugal’s wildfires this year have brought sharp focus on the escalating risk of these blazes — and what little officials have done to prevent them. Popular backlash prompted the resignation of a senior government minister and a formal request for a vote of no confidence in the ruling party. But they have also brought a lesson for the rest of the world: As climate change escalates, wildfires are a problem without an easy solution. (Just ask California.)

In a struggling post-recession Portugal, suppliers to its huge paper industry have accelerated a switchover from native species to faster-growing eucalyptus. Since trees consumed by fire can now be replaced more quickly, fire prevention — simple actions like trimming branches and clearing underbrush that could greatly reduce the country’s fire risk — has fallen by the wayside due to cost cutting. Add to that, more and more people are fleeing Portugal’s rural areas — leaving an aging population behind — it’s not clear who will be able to do that work even if resources were available to fund it.

“It really is a textbook example of wildfire as a socio-natural hazard,” José Miguel Pereira, a forest ecologist at the University of Lisbon tells Grist via email. Or to put it another way, human activity is making wildfires worse. These infernos are a product of our disregard for the fact that nature is now almost entirely something we’ve created — these disasters aren’t natural.

And as you know, our influence goes beyond simply neglecting tree management. There’s a growing consensus that the most important reason behind the recent surge in megafires is weather. September was the driest month in Portugal for at least 87 years, and this summer was among the hottest ever measured. All that’s led to a wildfire season that’s 525 percent worse than normal.

Climate models show that a warmer world will mean a drier southern Europe, and increasing ocean temperatures will likely bring more hurricanes further northward. That combination will boost the frequency of massive wildfires in Europe, especially in places like Portugal. On our current warming track, recent research shows the Mediterranean will cross a threshold into megadrought in the next few decades. Many of the trees in the region will likely go up in flames before next century.

This week, with the addition of Ophelia’s winds, weather conditions favorable for fire growth were extreme — and they occurred at a time of the year when farmers routinely set the ground ablaze to clear land. The mix resulted in fires so intense they created their own weather, spawning rare pyrocumulus clouds, literally a fire cloud.

“To the best of my knowledge this is new in Europe,” Paulo Fernandes, a forest ecologist at the University of Trás-os-Montes and Alto Douro, wrote to Grist, adding the weather was far outside what would be expected for mid-October. ”Extreme fires cannot be mitigated by a stronger firefighting force.”

What happened this week in Portugal points toward the scariest aspects of the Anthropocene: We are changing the world around us so fast that, in many cases, adaptation will be near impossible. As a hurricane, Ophelia was literally off the charts, and meteorologists have no doubt that the storm made the fires worse, rapidly transforming the smallest flames into towering infernos.

In my discussions with colleagues this week, not one weather or climate expert could think of an example of a tropical cyclone in the last 90-plus years that has sparked such a series of megafires. The closest corollaries were a 1978 storm in western Australia and a 2011 storm in Texas. Each fanned large fires, but the loss of life was relatively low. In 1923, a typhoon worsened the impact of fires sparked by a massive earthquake in Japan – but again, that required an earthquake.

Like Portugal, California has a Mediterranean climate that features a long summer dry season. In the wake of the state’s record-breaking wildfire season, which occurred under similar weather and climate conditions as the Portuguese fires, there’s a lot the West Coast can learn from what’s going wrong in Portugal. The most important lesson: Once huge fires get going, there’s not much that can stop them. The best hope, instead, is reducing risk in advance by preparing forests for the inevitable.

On Thursday, a bipartisan group of Western senators proposed a reform of forestry practices that will do just that. And it’s already getting praise from firefighters, environmentalists, and industry. In 2017, the U.S. spent a record $2 billion on fighting wildfires, and the new bill would support low-cost preparedness efforts — like those shelved in Portugal — to try to prevent future fires.

In a statement accompanying the release of the bill, Washington Sen. Patty Murray, one of its sponsors said the time for action is now: “We can’t sit by and let devastating wildfires become the new normal.”

The Many Benefits of Swale Landscaping

Digging a swale in your yard will reduce or eliminate this serious problem. A swale will also help conserve water and create a lovely, low maintenance landscape for your home.

What is a swale and why build one on your property?

The landscaping term ?swale? refers to a shallow trench, which may be dug on a property for 3 important related purposes:

  1. to catch storm water
  2. to direct the water away from your home
  3. to slow the water?s movement so it can be gradually absorbed into the ground

A swale usually is designed to follow the natural contours of the surrounding landscape, often with a berm (a human-made ridge of earth, which may be sown with plantings for stability) along the lower edge.

A driveway swale flanks your drive on one or both sides, in order to keep runoff from flowing into your garage or your home.

A swale may be combined with underground piping to handle your roof runoff.

The standard swale dimensions generally range from 6-18 inches deep and 8-24 inches wide, depending on the volume of water you are dealing with.

The many benefits of swale landscaping

Digging a swale will benefit your landscape in a number of ways. You will:

Avoid storm water pooling around your house and prevent damage to the foundation.
Help hold off flooding of your house, garage, and yard ? and perhaps your neighbor?s property.
Reduce soil erosion and loss of high quality top soil.
Collect rainwater much more easily than with a barrel or tank system.
?Recycle? rainwater to irrigate your garden, for a flourishing low maintenance landscape.

Before you start to dig a swale

Contact a one-call center for clearance before you begin swale construction, or any other home improvement that involves digging. Otherwise, you run the risk of hitting underground utility pipes or cables … and the hefty fine that can result.

In addition, check with the building authority in your area to see whether you?ll need a permit for the job. Many local governments have enacted strict laws concerning landscaping work that could possibly affect the groundwater system.

Consult a professional landscape contractor to plan and implement your project in the best and greenest way.

A swale as part of your landscape design

Plan your landscape design to include your swale. Make sure that any new feature you install, such as a fence, will not block the flow of runoff through the swale.

The swale does not need to be an unappealing stretch of bare earth. You can seed it with grass, but be sure that your swale?s sloping sides won?t make it too difficult to mow your new patch of lawn. An alternative is to plant it with low care wetland species such as cattails or lovely marsh hibiscus.

You might prefer to line the swale with nice-looking pea gravel or river rocks. Besides permitting storm water to infiltrate the soil more efficiently, small stones will give your swale the attractive appearance of a dry creek bed.

Finally, permeable pavers are perfect for stabilizing the bottom of a swale which will double as a garden walkway during the dry season.

10 Hot Ideas for a Drought-Resistant Garden

Cutting back on water doesn?t mean the end of your garden. You can take many steps to reduce the water needs of your yard without sacrificing beauty or practicality. Try some of these suggestions to make your garden more resilient in the face of drought and summer heat.

1. Prepare your soil appropriately.

Organic matter helps your soil retain water as well as supplying nutrition for your plants. It?s best to mix compost, manure, shredded leaves, lawn clippings or other organic materials into your soil before you plant anything.

An exception to this rule is when you?re planting plants that are native to desert areas. Cacti, succulents, agaves and similar plants have adapted to living in dry soils, which are typically low in nutrients. You don?t need to add any extra organic matter for these plants, using regular topsoil is fine.

2. Install permeable surfaces.

Pathways and driveways made from materials like pebbles, bark chips or irregular stones will allow rainfall to pass through and absorb into your ground. Whereas, solid cement or pavement surfaces often direct extra rainwater onto the street instead of capturing it on your property.

3. Choose water-wise plants.

You don?t have to limit yourself when deciding what to plant in your garden. Many modern hybrids and varieties of plants are bred to be drought-resistant.

Using plants native to your area is another great option. These will already be well-adapted to your local climate and able to withstand water fluctuations.

The Okanagan Xeriscape Association has an excellent plant database of many different drought-resistant annual and perennial flowers, as well as shrubs and trees. You can also ask your local garden center for recommendations.

4. Reduce or remove your lawn.

Watering the lawn uses about 50 to 75 percent of a home?s water use during the summer. And this is usually treated, drinkable water. You could significantly reduce your water costs and conserve this precious resource by simply removing unneeded areas of lawn, or cutting it out altogether.

If you use your lawn as an area for recreation, consider putting in synthetic lawn or other material that doesn?t require water. There are also alternative groundcovers that can handle some foot traffic and need less water, such as thyme, clover, creeping Jenny, yarrow or chamomile.

5. Cover your ground.

Exposed soil will lose more water to evaporation than soil covered in some way. Groundcover plants, rocks, wood chips or other mulches add an attractive layer over your soil and keep in moisture.

6. Provide shade.

An extra layer of protection overtop your garden will block the sun and reduce evaporation from the ground. Structures, like arbors, raised decks, gazebos and pergolas, can all provide needed shade for plants and animals.

Planting drought-tolerant trees and shrubs is another great option. Ginkgo, red maple, hawthorn, honey locust and western redbud are all trees that can handle limited water. Hardy bushes include butterfly bush, lilac, rose of Sharon, holly, forsythia and sumac.

7. Water selectively.

When you?re planning or rearranging your garden, always try to group plants according to their watering needs. For example, vegetables or fruit trees need adequate water to develop their crops. You can easily group these together in one area of your garden, leaving the other areas to more water-wise plantings and pathways.

An automatic watering system can also be helpful. You can design the system to deliver water exactly where it?s needed and nowhere else. An automatic system can also prevent overwatering. These guidelines can help determine how much to water your plants.

8. Collect rain water.

Rain water can be collected in anything from a bucket to an underground cistern. Regardless of the amount, saved water can be put to use around your garden and will help reduce your water bills.

You can also design your garden to passively collect rainwater. Try placing plants at the bottoms of your eavestroughs or next to rocks and pavers to catch the runoff.

9. Weed your garden.

Weeds take precious water away from the plants you want to grow. Weeds are much easier to remove when they?re small, so short patrols of your yard to remove weed seedlings on a regular basis are actually more efficient than putting off weeding until it becomes a large project.

10. Build raised beds.

Certain types of raised beds are excellent for retaining water despite being more exposed to the elements.

Keyhole beds are typically circular, raised beds with a composting tube through the middle and a notch in the side. They look like keyholes when viewed from above. Keyhole beds were developed by a humanitarian aid organization in southern Africa, where they were proven to effectively grow food crops in their unforgiving climate.

Should You Use a Paper Towel Or Cloth Towel For That Mess?

In the quest to live a more environmentally-friendly life, there are a few questions that consistentlycome up for eco-minded folks.

One of these conundrums is the question of whether you should reach for a paper towel or a dish towel when presented with a spill or other small mess. Like so many of these arguments, the answer is, “it depends.”

On the surface, the answer to this question might seem simple.After all, paper towel waste is a big problem for Americans. “Here inthe U.S. we currently use more than 13 billion pounds ofpaper towelseach year and that number is growing steadily,” according to The Paperless Project. “This equals more than 3,000 tons ofpaper towel wastein the U.S. alone.”

Holy paper waste, Batman! Since cloth towels can be reused for years, it may seem like they’re the obvious green choice, but wait just one second…

Reusing textiles requires washing, and washing requires water (and in most cases electricity). Water is increasingly becoming a precious resource in post climate-change world(just ask California), and not everyone gets their electricity from clean sources like solar, wind or geothermal power. Depending on the age/efficiency of your washing machine, each load could sendaround 20 gallons of water down the drain, not to mentionthe energy used to dry it (unless you’re using a clothesline). There’s also the chance that cloth towels can harbor or even spread bacteria if not properly maintained. Yuck!

So what’s an earth-loving humanto do?

The answer is to employ a hybrid approach that reduces your paper towel consumption as much as possible (if every household in the U.S. used just one fewer70-sheet roll of paper towels,it would save 544,000 trees each year), and to use recycled paper towels when the situation calls for a disposable cleaning solution (every ton of recycled paper saves an estimated 7,000 gallons of water).

The Dry Bulk Market Is More Exciting Than You Think

The Wall Street Journal has an intriguing story today on its front page:

When stocks rose after last year’s presidential election, DryShips Inc. left the market far behind. The little-known Greek dry bulk carrier’s epic one-week rally pushed its shares up by 1,500% for no apparent reason. The rally quickly unwound after the shares were briefly suspended by Nasdaq, but the run-up appears to have made possible a flurry of financial maneuvers that may earn the company’s founder a huge windfall, according to calculations by The Wall Street Journal, while small investors suffered hundreds of millions of dollars in losses. Since they peaked, DryShips’s shares are down by 99.9%.

The Journal provides a handy timeline of events surrounding DryShips. I’ve added the line in red:

Somebody was sure excited about the prospects for bulk shipping in the Trump era. This is especially mysterious since DryShips announced that it was defaulting on its loans (“suspending principal and interest payments”) right before the huge price runup.

Oddly enough, when I went looking for the performance of other dry bulk carriers at around the same time—fully expecting to find that DryShips was indeed unique—I found another carrier with a very similar profile. Right after the election, stock in Globus Maritime skyrocketed 900 percent for a day or two:

Which Type of Mulch is Best for Your Garden?

Next time youre in nature, try looking at the ground. Its usually covered in old leaves, fallen branches, rocks and other debris. This layer is vital for soil health. It helps regulate moisture, provides nutrients, suppresses weeds, prevents erosion and supports resident microbes and insects.

You can recreate this effect by mulching any bare areas in your garden. Mulch is essentially anything that covers your soil. And its meant to stay on top of soil as a buffer, not to be dug in like compost or fertilizer. Organic types of mulch will break down and release nutrients over time, but keep them on the soil surface for the most benefit.

There are many different types of mulch you can use. Each one has its own advantages and disadvantages, depending on your site. These are some of the most common mulches available.

Wood Chips and Shredded Bark

Wood chips are primarily branches and wood fiber cut into small pieces. Whereas, shredded bark is only bark with no wood pulp. Both make excellent mulch in areas youd like to keep clean, such as under strawberries or other low-growing crops. You can also use them in pathways or around perennial plantings.

Wood chips retain water better and break down faster than shredded bark. This means that chips may be a better choice in areas like a vegetable garden where you want more moisture and nutrients. Bark may do better in long-term areas where you want better drainage, such as underneath shrubs.

Rocks

Covering the soil with large rocks counts as mulch. Rock gardens may look dry, but the moisture stored under rocks helps sustain the surrounding plants.

Rocks will also capture heat from the sun and create warm microclimates around them, which can be very helpful in cooler regions. Rocks can also prevent erosion when used on a slope.

Yard Debris

Dont be too quick to clean up your yard. Lawn clippings can be left on the lawn to compost in place, or gathered and spread over your garden beds. You can do the same with any plant trimmings, especially leafy greens from vegetables or flowering plants. These can be left next to the plants to cover the soil and allow the nutrients to be recycled.

Fall leaves are a great opportunity to add extra organic matter to your beds. They also help keep the soil warm and safe over winter.

If you have your own compost pile, your finished compost can be used as mulch. Depending on how rich your compost is, you may want to spread a small amount throughout your garden and then cover it with a less nutritious mulch like dried leaves.

Gravel or Pebbles

These small stones are typically used for pathways or driveways. Unlike pavement or cement, they allow water to pass through to the soil underneath. Like larger rocks, gravel and pebbles will absorb heat during the day and release it at night.

Its best to contain gravel or pebbles within a frame or solid edging material. They often scatter into your garden beds or lawn if theyre left loose. This is annoying for bed maintenance, and can be a hazard if your lawnmower catches and throws loose gravel.

Wine Cork Mulch

Almost 13 billion wine corks are produced worldwide every year. Unfortunately, many of these end up in landfills. A much better use for corks is to repurpose them as mulch.

Wine corks are a natural material made from bark of the cork oat tree, native to the Mediterranean. Corks are dried and compressed to be water resistant, so they need to be broken into smaller pieces to make a good mulch. These are full instructions on how to make your own wine cork mulch.

Newspaper

Mulching is a great way to reuse newspaper. Newspaper blocks sunlight from reaching the soil, so its excellent for controlling weeds. These are some helpful tips on how to use newspaper mulch in your garden.

Newspapers that are only printed with black ink are safe to use. The black ink contains a carbon-based compound thats biodegradable. On the other hand, colored inks may contain harmful metals or other compounds, such as lead or sulfur. Not all inks are harmful, but its hard to know exactly whats in each one. Its best to avoid any colored flyers and inserts from your newspapers.

Straw

Straw is the dry stalks left-over from grain crops after the grains have been harvested. Not to be confused with hay, which is usually a mix of grasses, legumes and other plants that are grown to feed to animals. Hay includes all the seeds from these plants, which would create a huge weed problem if you used it as mulch.

Straw will have less seeds in it than hay, although some of the grain and other possible weed seeds will be present. Its good organic matter and will provide lots of carbon to your soil as it breaks down.

Although, avoid using straw if you have any rodents on your property. Rodents like mice, voles or rats love nesting in straw and will make homes in your mulch.

Landscape Fabrics

The most common landscape fabric is made from woven polypropylene, which is a type of plastic. Its typically laid directly on top of soil. The fact its woven allows water to go through the fabric while providing a solid barrier to prevent weed growth. You can cut individual holes in the fabric where you want to plant shrubs, trees or other plants.

Other mulches can be put on top of the fabric to make it look better, such as bark mulch or gravel. Although, weeds often take root in between the mulch and the fabric as the fabric breaks down over time. These weeds can be difficult to remove in older landscapes as they become entangled in the fabric.

Synthetic Lawns

Many mulches are good in garden beds, but what if you have an area you want to keep open for recreation or other uses? Thats where synthetic lawns work well. They dont require the water and maintenance of a real grass lawn, and they still provide the benefit of protecting your soil.

A synthetic or artificial lawn is made from different types of plastic materials to create a mat that looks and feels like real grass. It can be shaped to fit any area you need to fill.

Living Mulch

If you have a bare edge in your garden, try planting something low-growing to fill the space. Perennials like thyme, sedum, rock cress, snow in summer or candytuft can make excellent ground covers that will return every year. Annuals like alyssum, lobelia, begonia, bacopa or petunias will bloom all season as well as cover your soil.

Uncovering the Plot to Kill Lettuce

Glossy, beautifully produced cookbooks tend to focus on scenic vacation magnets like Tuscany, Provence, or Napa Valley. But in Victuals, the veteran cookbook writer Ronni Lundy gives that treatment to a place most known in the popular imagination for economic and environmental dysfunction: the Southern Appalachians.

America often underestimates the Appalachian states of West Virginia, Kentucky, eastern Tennessee, and the western Carolinas—even assuming that the pronunciation of the word “victuals” as “vittles” must be uneducated slang. Not so, reveals Lundy. In fact, the actual accurate pronunciation is “vittles.” “So we’ve been right for all of these years,” Lundy says on a recent episode of the Mother Jones food podcast Bite (interview starts at 14:45). “We’ve been right about the way you pronounce it, we’ve been right about the way you grow them, preserve them, the way you dry them and cure them and eat them, and the way you create community around the table.”

In Lundy’s book, a kind of travelogue with recipes, a different vision of the region comes to life: one of lushly forested mountains and fertile valleys dotted with small farms, blessed with “the most diverse foodshed in North America.” There’s even an ancient tie to the sunny Mediterranean. “What we call the Appalachian Mountains was once part of a larger chain on the ancient super-continent of Pangea,” she writes; and Pangea’s split left today’s Appalachia with “sister peaks” in present-day Morocco.

Lundy and I talked about her own roots in the region, the recent hipsterization of Appalachia, and what a typical dinner table might feature at the height of summer—which I can testify, having once lived in the region for nearly a decade, is a time of great beauty and bounty. And we talked through an irresistible dish called “killed lettuce”—fresh salad greens wilted with warm bacon grease. While the book, like the region’s small farms, teems with fresh produce, the hog and its various products emerge as the hero of Victuals: a reminder of the noble beast’s central place in so many resourceful food traditions across the globe.

Killed Lettuce

serves 4

Ingredients

8 cups torn crisp salad greens (in bite-size pieces)
2 whole green onions, finely chopped
4 bacon slices
1/4 cup apple cider vinegar
salt and freshly ground pepper

Directions

Rinse and thoroughly dry the greens, and then toss them with the green onions in a large bowl.

Fry the bacon in a skillet over medium heat until very crisp, and remove from the skillet to drain. Remove the skillet from the heat. Immediately pour the vinegar over the lettuce and toss, then pour the warm bacon grease over that, tossing again. Add salt and pepper to taste. Crumble the bacon over the greens and serve immediately.

*These basic proportions can be used in many variations: Put a soft-cooked egg on top, which becomes part of the dressing, or warm beans. The defining part of the dish is that the greens are not cooked, but are tossed with vinegar and hot bacon grease to wilt them.
